Southwestern Potato Salad

Ingredientes

  • 3 Tbsp. extra virgin olive oil
  • juice of 1 lime
  • 2 Tbsp. vinegar
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. sugar
  • 1/2 tsp. cumin
  • 1 1/2 lbs. red skinned potatoes
  • 2 Tbsp. minced fresh cilantro
  • 1/2 c. minced red pepper
  • 1/2 c. minced green pepper
  • 1/2 c. minced celery
  • 1/2 c. minced onion
  • 1 can black beans
  • 1 can yellow kernel corn

Direcciones

  1. Boil potatoes till just done. Don't over cook. Cold, peel and cut into cubes.
  2. Combine potatoes, and remaining vegetables. Combine oil, vinegar, lime juice, and spices. Pour over vegetables and toss.
  3. Chill. Make 6-8 servings.
