Spanish Bacon Cornbread

Ingredientes

  • 2 c. flour
  • 1/4 c. sugar
  • 1 T salt
  • 2 packages. yeast
  • 1 egg
  • 1/4 c. fried crumbled bacon
  • 1/4 c. instant chopped onion
  • 1/4 c. minced green pepper
  • 3/4 c. cornmeal
  • 1 c. water
  • 1 c. lowfat milk
  • 1/4 c. veg. oil
  • 1-1/4 to 1-3/4 c. flour

Direcciones

  1. Put together items in large bowl. Heat in saucepan till very warm. Add in egg and liquid to dry items. Blend on low 1/2 minute and 3 min on high. By hand add in 1-1/4 to 1-3/4 cups flour to create a stiff batter. Cover; let rise in warm place about 50 min. Stir down batter; spoon into greased pan. Immediately place in oven. Bake in greased 9-inch round layer pan or possibly 12-inch pizza pan at 375 degrees, 40 to 50 min for 9-inch, and 30 to 35 min for 12-inch. Makes 1 loaf.
