The burgers that go with the buns... sorry, I got side tracked from posting yesterday morning with the brilliant idea to bake yet more delicious treats for Noodle's teachers. Good news for you though, that means another delicious blog post!

This, however, is not what I made for them. These are the burgers I made to go with the hamburger buns during my cooking/baking frenzy the other night. The results? Quite simple, spicy and flavorful, very filling and Honey liked them!

Here is how easy it is... I'm almost ashamed to post about it because it's that easy. Once your veg is diced, put your zucchini, onion, beans, tomatillo, curry salt, garlic, cumin and coriander in a food processor; blend until smooth. Add the 1/2 cup panko and blend to incorporate.

From there, put the rest of the panko on a plate and start forming 'balls' from the black bean paste. If it is a little 'loose', add more panko. When your balls are formed, roll them in the panko plate, flattening a bit as you go, so you have a fat sort of flat patty. Note: don't make them completely flat right now. I find that they fall apart if you do that. You will flatten more when cooking.

Heat a griddle or pan on med high, leaning toward high. Add some veg oil and once ready, put your ball pattys on and sear away. Let the first side go until brown and crispy, then flip and do the same with the second side. Note: when you flip, this is when you can flatten them out a bit more. The searing makes a crust, giving them more structure.

Serve:

Using one of those fantastic home made buns, top with whatever 'burger fixins' you like. Honey likes mustard, ketchup, rocket and tomato. Top that with your black bean patty and serve!
