Spicy Chicken And Rice Soup

Ingredientes

  • 1 Tbsp. oil
  • 2 x chicken thighs skinned, boned,
  •     and cut into 1/2" pcs
  • 1 lrg onion diced
  • 4 x garlic cloves chopped
  • 1 pkt frzn minced spinach - (10 ounce) thawed
  • 1 can chicken broth low sodium
  • 3/4 c. salsa - medium heat
  • 1/2 tsp jalapeno sauce
  • 2 Tbsp. chili pwdr
  • 1/2 tsp cayenne pepper
  • 1 can stewed tomatoes,
  •     (or possibly 1 can Ro*Tel diced tomatoes with green chiles)
  • 1 x bay leaf
  • 2/3 c. raw brown rice

Direcciones

  1. Put oil in very warm pan, add in chicken, onion and garlic. Stir-fry rapidly till chicken is lightly browned and sealed on all sides.
  2. Put in 3 1/2-qt crock pot with all remaining ingredients. Add in sufficient water to fill the pot to 3/4 or possibly more. Cook on LOW all day.
  3. Whoever gets home from work first, stir it and check the water level. If you need to add in more water, be sure and turn the pot to HIGH, and cover.
  4. Serve with a spoonful of fat-free lowfat sour cream and some minced green onion on the soup.
  5. Comments: Makes a thick soup, almost a stew consistency. It is slightly spicy. If you want it spicier, use hotter salsa, more chili pwdr, more cayenne, and/or possibly more jalapeno sauce.
