Spicy Manhattan Fish Chowder

Ingredientes

  • 1/2 c. Diced green bell peppers
  • 1/4 c. Cubed yellow onions
  • 1 tsp Warm sesame oil
  • 4 c. Minced fresh tomatoes
  • 1 Tbsp. Finely minced fresh parsley
  • 1/4 tsp Salt
  • 1/4 tsp Freshly grnd black pepper
  • 8 x Saffron threads, dissolved in 1/2 c. water
  • 2 x Cloves garlic, crushed
  • 1 c. Water
  • 1/2 lb Scrod or possibly grouper, filleted and cubed

Direcciones

  1. Saute/fry the peppers and onions in oil in a large saucepan for 4 to 5 min on high flame. Add in the remaining ingredients, except the fish, and cook over medium heat, covered, for 15 to 20 min. Add in the fish and cook an additional 15 min. Serve warm over brown rice.
  2. Yield: 2 to 4 servings.
  3. Variation: Two Tbsp. curry pwdr can be substituted for the saffron threads.
