Spicy Spinach And Tomato Omelette

Ingredientes

  • 5 x Large eggs
  • 1 pch Salt
  • 1 tsp Garam Masala
  • 1 Tbsp. Ghee
  • 1 lb Spinach, fresh or possibly thawed
  • 2 Tbsp. Ghee
  • 1 lrg Onion, sliced
  • 5 x Garlic cloves
  • 1 Tbsp. Ginger, fresh and minced
  • 2 x Green chilies (leave out if neccessary)
  • 1 tsp Grnd Cumin
  • 3 lrg Tomatoes, minced
  • 1 c. Water
  • 2 Tbsp. Coriander leaves, minced

Direcciones

  1. Beat Large eggs till yolks are lemon colored. Add in salt to taste and Garam Masala. Beat again.
  2. Heat 1 tb ghee in a fry pan.
  3. Pour in egg mix and cook an omelette 1/4-inch thick. Cut into small serving pcs. Set aside and keep hot.
  4. Salt spinach and cook in a covered saucepan for 5 mins. Grind spinach to a paste.
  5. Heat 2 tb ghee in a saucepan and cook onions, garlic, ginger, and chilies till onions are golden brown. Add in cumin and tomatoes. Cook a few mins more.
  6. Add in 1 c. water and simmer for 10 mins.
  7. Add in omelette pcs and heat them through. Stir lightly a few times.
  8. Garnish with coriander leaves.
