Receta Super Easy Crock-pot Chicken Tortilla Soup

Super easy and about as tasty as most tortilla soup recipes that you'll work a lot harder to make! This recipe sounds pedestrian, but it tastes much better than that.

Ingredientes

  • 4 chicken breast halves
  • 2 15 oz cans of black beans (with liquid)
  • 2 15 oz cans Mexican Stewed or Rotel tomatoes
  • 1 cup salsa (your choice of spiciness, we use medium)
  • 4 oz can chopped green chiles
  • 14.5 oz can tomato sauce
  • Light tortilla chips or strips sliced or roughly chopped (optional)
  • 2 cups grated cheese (optional)
  • Chopped cilantro (optional)
  • Chopped avocado (optional)
  • Sour cream (optional)
  • Lime wedges (optional)

Direcciones

  1. Combine all but last 6 (optional) ingredients in large slow cooker.
  2. Cover and cook on low for 8 hours or high for 5 hours.
  3. Just before serving remove chicken and cut into bite size pieces. Stir back into soup.
  4. Put chips, cheese, and any other optional ingredients in serving bowls with spoons. Ladle soup into bowls and let everyone add the toppings they like. Or add toppings yourself and serve to your guests if you prefer.

      I made this for the family last night. Everyone (and this never happens) loved it. We had it for lunch today too - and still liked it - that never never happens. Thanks for this easy recipe - PERFECT for us!

      I used kidney beans for one of the cans of beans, and threw in frozen corn in the last hour. - which worked great. Mine was really thick - more like chili - - no complaints here!

        Glad you liked it Laurel! We made this last year at the Hopkins' in Park City. Perfect on a cold winter day when you'd rather be doing something other than cooking.

          For those with limited energy: I think this would work well with just a few modifications. Definately use a cooked chicken (leftovers can be frozen). Toppings can be prepared ahead, and each person can add their own. If you are watching calories, just sprinkle a little cheese on top. Be careful with the sour cream (or use a low fat version, but some don't have as good a taste). Avocado, too, but it does have a good for you fat (same calories). Looks tasty!

            Hi Dianna. You are right. 115g of black beans have like 100 calories, not 450 calories. I think the software is assuming that these are dried beans (which have 4x as many calories per ounce as canned or cooked beans). I'll ping CookEatShare and have them fix this. You can assume aroung 300-500 calories per serving depending on how much cheese, chips, avocado, and/or sour cream you add!

              This looks delicious and so easy, but I can't believe the calories are so high :( It looks really healthy, if you leave off some of the optionals, so I'm a bit confused....seems to be the beans that makeit that high. How big is a serving cupwise? It says 6 servings, so maybe it's assuming a bigger than I woudl normally have. I really want to make this, but it's too many cals for me to have in one meal at this time. Anybody have any thoughts on this?

                I can't seem to get the other 2 replies to appear, so forgive me, if I repeat something. It looks like the cheese is adding a lot of calories (choose a low fat version), and just sprinkle a little on the top. I also think the servings may be larger than I would eat as a calorie watcher. It looks like a good, filling, nutritious recipe!

                  This recipe looks great! For the ultimate lazy person (me), do you think that it would still be just as tasty if one simply bought a rotisserie chicken and shredded it into the Crock Pot?
