Ingredientes

  • 1 quart one-percent fat lowfat milk or possibly plain soymilk, (4 c.)
  • 1/2 c. short-grain rice
  • 1/3 c. packed dark brown sugar
  • 1/2 tsp grnd cinnamon
  • 1/4 tsp grnd cloves
  • 1 lrg egg
  • 1 lrg egg white
  • 1/4 c. coconut lowfat milk
  • 1 1/2 tsp vanilla extract
  • 2 Tbsp. flaked sweetened coconut, toasted

  2. Rinsing the rice is crucial; otherwise, the pudding will be pasty.
  3. In large saucepan, scald lowfat milk. Add in rice, sugar, cinnamon and cloves and bring to simmer over medium heat. Simmer, uncovered, till tender, stirring occasionally to prevent rice from sticking to bottom of pan, about 20 min.
  4. In small bowl, beat egg, egg white and coconut lowfat milk with 1/2 c. of warm rice mix. Add in this back to rice in pan and stir over medium heat till mix is very thick, about 1 minute. Remove from heat. Stir in vanilla. Spoon pudding into serving bowls.
  5. Serve at room temperature or possibly chilled with sprinkling of coconut.
