  • 1 Tbsp. unsalted butter
  • 1/2 large onion, finely chopped (about 1 cup)
  • 1 large clove garlic, minced
  • 2 Tbsp. all-purpose flour
  • 3 cups low-sodium chicken broth
  • 1 28-oz. can whole peeled plum tomatoes (with their juice) pureed
  • 2 tsp. sugar
  • 1 sprig fresh thyme
  • 3 Tbsp. freshly grated Parmesan cheese
  • Salt and freshly ground black pepper
