!%20%20However,%20I%20do%20LOVE%20Biscuits%20and%20Gravy%20and%20could%20really%20eat%20it%20anytime%20of%20day!%20%20Unfortunately,%20it%20is%20not%20known%20as%20the%20most%20healthy%20breakfast%20on%20the%20planet%20and%20therefore%20not%20made%20that%20often,%20which%20is%20for%20the%20best%20probably%E2%80%A6UNTIL%20NOW!!!%3C/p%3E%3Cp%3EBehold%E2%80%A6.a%20not%20so%20naughty%20form%20of%20Biscuits%20and%20Gravy!%20%20I%20first%20made%20this%20dish%20when%20our%20friends%20John%20and%20Jess%20were%20over%20one%20night%20and%20we%20were%20trying%20to%20figure%20out%20what%20to%20have%20for%20dinner.%20%20I%20declared%20that%20I%20felt%20like%20biscuits%20and%20gravy,%20and%20with%20the%20help%20of%20my%20friend%20Jess%E2%80%A630%20minutes%20later%20we%20were%20feasting%20on%20breakfast%20for%20dinner%20with%20NO%20objections!%3C/p%3E%3Cp%3EThere%20are%20three%20things%20I%20do%20to%20make%20this%20dish%20a%20little%20healthier!%20%20I%20use%20Chicken%20Sausage%20which%20has%20way%20less%20fat%20than%20its%20oinking%20counterpart.%20%20I%20use%20whole%20wheat%20in%20my%20biscuits,%20and%201%25%20milk%20in%20my%20gravy!%20%20All%20three%20of%20these%20small%20changes%20makes%20for%20a%20big%20difference%20in%20calories%20while%20not%20really%20effecting%20the%20delicious%20flavor%20of%20my%20final%20dish!%20%20I%20hope%20you%20will%20try%20this%20recipe%20and%20let%20me%20know%20what%20you%20think!%3C/p%3E%3Cp%3EFirst%20step%20is%20to%20make%20the%20biscuits!%20%20It%20only%20takes%20a%20few%20minutes%20to%20make%20biscuits%20and%20it%20is%20very%20very%20easy!%20%20You%20simply%20mix%20the%20flour,%20salt,%20and%20baking%20soda%20together.%3C/p%3E%3Cp%3ENow%20take%20your%209%20Tbls%20of%20very%20cold%20butter%20and%20cut%20it%20into%20cubes%20to%20add%20to%20the%20flour.%20%20It%20is%20one%20stick%20of%20butter%20plus%201%20Tbls.%3C/p%3E%3Cp%3EAdd%20the%20Butter%20to%20the%20Flour%20and%20mix%20it%20together%20with%20your%20hands.%3C/p%3E%3Cp%3EA%20trick%20that%20my%20wonderful%20mother%20taught%20me%20to%20help%20make%20your%20biscuits%20EXTRA%20flaky%20and%20fabulous%20is%20demonstrated%20in%20the%20following%20pictures.%20%20When%20mixing%20the%20butter%20into%20the%20flour,%20smash%20the%20butter%20into%20thin%20flakes%20in%20your%20hand%20while%20mixing%20into%20the%20flour%20as%20this%20is%20what%20causes%20the%20flakiness%20and%20lightness%20in%20your%20biscuits.%3C/p%3E%3Cp%3EMix%20the%20butter%20and%20flour%20mix%20until%20well%20incorporated%20and%20the%20butter%20is%20no%20larger%20than%20pea%20sized.%20%20Add%20in%20the%20chives%20and%20%20now%20is%20the%20time%20to%20add%20the%20milk.%20%20When%20you%20add%20the%20milk,%20mix%20just%20until%20a%20dough%20forms%20and%20NO%20longer.%20%20You%20don%E2%80%99t%20want%20to%20over%20mix%20your%20biscuit%20dough!%3C/p%3E%3Cp%3EOnce%20the%20dough%20is%20formed,%20plop%20it%20out%20on%20a%20floured%20surface%20and%20pat%20together%20with%20your%20hands.%20%20There%20is%20no%20need%20to%20use%20a%20rolling%20pin%20with%20this%20dough.%20%20You%20can%20pat%20it%20down%20to%20about%201/2%20inch%20thick%20with%20your%20very%20clean%20hands%20and%20cut%20your%20biscuits%20from%20there.%3C/p%3E%3Cp%3EIt%20is%20ok%20if%20you%20still%20see%20pieces%20of%20butter%20throughout%20the%20dough%E2%80%A6it%20will%20just%20add%20to%20the%20yumminess%20later%20on%20I%20promise!%3C/p%3E%3Cp%3EYou%20can%20actually%20SEE%20in%20the%20above%20picture%20how%20flaky%20these%20biscuits%20are%20going%20to%20be%20in%20the%20end!%20%20YUM%20YUM%20YUM!%20%20%20I%20brush%20the%20tops%20with%20a%20little%20melted%20butter%20before%20baking%20for%209-11%20minutes%20at%20425%20degrees.%20%20You%20know%20when%20they%20are%20done%20when%20they%20start%20becoming%20golden%20brown%20on%20the%20bottom%20edges%20and%20cracking%20apart%20with%20goodness%E2%80%A6it%20is%20a%20very%20happy%20thing%20to%20see!%3C/p%3E%3Cp%3EWhile%20your%20biscuits%20are%20baking%20you%20can%20make%20your%20gravy,%20or%20you%20can%20make%20the%20biscuits%20ahead%20of%20time%20and%20heat%20them%20up%20right%20before%20serving!%20%20It%20is%20up%20to%20you!%3C/p%3E%3Cp%3EFirst%20step%20for%20making%20the%20gravy%20is%20to%20cook%20your%20sausage%20and%20onions.%20%20As%20I%20used%20very%20low%20fat%20Chicken%20sausage%20I%20needed%20to%20add%202%20Tbls%20of%20Olive%20Oil%20to%20the%20pan%20before%20adding%20in%20the%20sausage%20and%20shallots.%20%20%20Cook%20this%20mixture%20until%20there%20is%20no%20more%20pink%20in%20your%20sausage%20and%20then%20put%20in%20a%20bowl%20and%20set%20aside.%20%20Make%20sure%20to%20leave%20the%20extra%20oil%20and%20sausage%20fat%20in%20the%20pan%20when%20you%20set%20aside%20the%20cooked%20mix%20as%20you%20will%20use%20that%20to%20start%20your%20Roux%20(%20a%20mix%20of%20fat%20and%20flour%20that%20works%20as%20a%20thickening%20agent).%3C/p%3E%3Cp%3EI%20use%20the%20remaining%20flavor%20morsels%20and%20oil%20in%20the%20pan%20to%20make%20my%20roux,%20which%20will%20be%20what%20thickens%20my%20gravy.%20%20To%20this%20oil%20I%20add%20in%202%20Tbls%20of%20Butter%20and%20when%20that%20is%20melted,%20I%20add%20in%20my%20flour.%20%20Switch%20to%20a%20wire%20whisk%20at%20this%20point%20and%20whisk%20your%20roux%20togther%20and%20cook%20for%202%20minutes.%3C/p%3E%3Cp%3ETo%20this%20roux%20add%20in%20your%20milk%201/2%20cup%20at%20a%20time.%20%20Add%20in%20the%20milk%20and%20wisk%20briskly%20to%20mix%20out%20all%20of%20the%20lumps%20and%20once%20it%20starts%20to%20thinken,%20add%20in%20another%201/2%20cup%20of%20milk.%20%20This%20will%20happen%20fairly%20quickly.%3C/p%3E%3Cp%3ESeason%20up%20your%20gravy%20with%20the%20Garlic%20Powder,%20onion%20powder,%20and%20salt%20and%20pepper.%20%20I%20also%20add%20in%20a%20dash%20of%20Paprika%20for%20color%20and%20a%20little%20extra%20flavor!%3C/p%3E%3Cp%3ETo%20this%20gravy,%20add%20in%20your%20cooked%20sausage%20and%20shallots%20and%20stir%20to%20mix.%20%20Now%20it%20is%20almost%20time%20to%20party!%3C/p%3E%3Cp%3EI%20add%20in%20a%20few%20extra%20Tbls%20of%20chopped%20chives%20for%20flavor%20and%20color%20and%20now%20you%20are%20ready%20to%20serve!%3C/p%3E%3Cp%3EAll%20you%20do%20to%20serve%20is%20cut%20open%20a%20warm%20flaky%20biscuit,%20slather%20it%20in%20the%20delicious%20gravy%20and%20ENJOY!%20%20%20If%20you%20leave%20the%20chives%20out%20of%20your%20biscuits,%20they%20are%20fabulous%20with%20butter%20and%20jam%20or%20honey%20as%20well!%20%20YUM!%3C/p%3E%3Cp%3EHappy%20Biscuits%20and%20Gravying!%20%20%20%20(by%20the%20way,%20the%20gravy%20is%20even%20better%20the%20second%20day%20after%20the%20flavors%20have%20intensified!)%3C/p%3E){kind=link}
