BREAD BAKING

I've recently started making breads & biscuits. I've done fairly well in the past making cakes, pies, & cookies. But I am having considerable problems wit my biscuits & breads. Let me start with bread..either the dough will not rise or it'll only rise one tim and that it. When I bake its coming out FLAT! Biscuits are another story. ome will come from the oven standing tall & inviting while part of the same batch comes out looking like flat tires...completely deflated. One overall theme is occurring with all...everything comes out "HEAVY"!
I don't understand what I am doing wrong with my breads.. Can I get some advise/help please?

part of the prob may be you are working the dough too much. that is what my grandmother always told me. Also the freshness of your ingredients is important.

Biscuits takes lots of practice just ask my dogs:)
