Chinese cooking, great!

I love to cook Chinese! My fiance actually does a much better job than I. I have no idea why she cooks it so well, she's not Asian, and she's from Butte, Montana which I don't think has a huge Asian population, mostly Irsh from what I can tell. Looking forward to posting some recipes on here and getting feedback.
