Is there such a thing as "Easy Appetizers?"

Is "Easy Appetizers" an oxymoron? Maybe, maybe not. What do you think? A super easy appetizer is a ritz cracker with some olive tapenade smeared on top. Delicious. (I can hear the serious chefs out there moaning in disagreement on that one!) The point is, whatever ingredients you can think of, you can make an easy appetizer out of it.

But, even the appetizers that take a little more time and thought can still be easy to make. You just need to be in the mood. Tell me what you think makes a great appetizer and share your recipes here. It doesn't have to be "easy", it just has to be good!
