Hi All,
I've formatted my Gluten Free Sourdough Starter recipe into a free easy-to-follow PDF. This is a natural starter, no yeast needed. The PDf also includes my recipe for gluten free pancakes that are also dairy and egg free.

This sounds wonderful and I'm dying to try it. I'd like to get clarification on a couple things.
1. The recipe seems to state that ANY fermented drink (water kefir, kombucha, etc) is ok to use. Can you please confirm that it is OK to use a commercial brand of Kombucha Tea INSTEAD of the water kefir? If so , that would be a great time saver.
2. Can I substitute my rice sourdough starter in a standard sourdough recipe or are other changes needed?

1. I believe you could use a commercial brand of Kombucha Tea as long as you believe it's live and not pasteurized in any way. I find the kombucha takes a day or two longer than water kefir to get bubbly but works just the same.
2. I have tried to substitute my rice sourdough for standard wheat sourdough recipes and ended up with many disasters. I spent a year experimenting and finally came up with a technique that is very dependable. My book, The Art of Gluten Free Sourdough Baking, is based on that technique and produces breads that I've been extremely happy with. I found that gluten free sourdough starter and bread needs to be treated quite a bit differently than standard sourdough.
