Re: Recipes

Hi! Just starting on our way. My son has aspergers and I have always had stomach/gut issues. So, long story short, now starting to switch to GFCF yeast free diet...yikes. Any support/inspiration would be much appreciated!!

Re: Recipes

Hi Melissa...sorry I havent posted yet :-O I have been so busy...I do have an awesome cook book for you to look at,. Its called Cooking Free by Carol Fenster phd. I got it at Barnes n Noble and is sooo easy to follow I was going to post recipes from her book, they are great! Especially a chocolate cake! I was sooo relived to find such great easy tasty recipes...I dislike cooking so to be able to say I "like" cooking these is a true blessing ;-) Not that I have a choice since my son's diagnosis. I know the "normal doctors" out there dont think any diagnosis can be controlled with food...but my son is living proof that it does help! His symtoms arent complelety gone, but soooo much better and hey we are all much much more healthy for it...so keep going on this diet, but you NEED to be 100% commmited. You can not do it mon-fri and then say ok you can have sugar here and there. Just want to make that clear, its like a detox and even 1 grain of the stuff you are trying to avoid will set back the whole process...trust me, that was the hardest part for us at first. It is a HUGE change, but it is a change for the better. We live in a easy convenience generation, everything in a box with a bunch of crap in it...which makes it harder for us to find things for our family. But they exist and once you find them you will be happy! I have a ton of products that I found. Condiments were the hardest, with no sugar. I thought I was going to scream with excitement at whole foods when I finally found ketchup! - I wll list my sons favorite store bought items if you want :) Anything to help...god knows I wouldve loved that if it was me just starting out!

Re: Recipes

I was so happy to find this forum. I have always been Lactose Intolarant. It was diagnosed after 6 mos as an infant and a Jewish doctor tried diet instead of surgery on me because I also have Hirsch Sprunds diesease where I am missing a nerve of my small colon. I had to go Gluten Free in 2009 right after my sister's wedding. I had gotten a free sample of Aveeno Natrual shampoo and it had wheat in it. My scalp burned for at least half or more of the evening into the nighttime. I am sensitive to corn, yeast, wheat, grapes, raisins (too much iron), milk (of course and not just the milk itself, anything with a milk byproducts.) I cannot tell you how hard it has been to try to go grocery shopping. My family and I are much healthier for my intolerances and of course the genetic engeneering. Thank God I am not allergic to soy. But because I did have soy formula or milk most of my life, I got too much Estrogen. I am only 28. So, finding a cookbook and recipes for these things are wonderful. I enjoy Cream of Rice cereal in the mornings during fall through early Spring for my cereal. I can still have oats but I seem to be less constipated with the rice cereal. I don't have the nomral diarreah symptom usually. Most of the time I get severly constipated and don't go for 3 days. This is part of my family history. Or, I get the diarreah? on occasion too. It has been really hard in the past year because it has been so much at once. I wonder if it is easier as a child because they haven't grown up with having these things. I know it is hard for class parties/snacks but for me I was able to have most of these as a kid with the exception of corn/milk but I always had tummy aches. So I wonder if it was present and we just weren't as aware of it as we are now. Any insights?

Re: Recipes

First things first RA...Go buy the BEST COOKBOOK EVER! Cooking Free by Carol Fenster phd. I got it at Barnes n Noble....here's another link - from Amazon, wish I had seen it there, way cheaper ;-)

http://www.amazon.com/Cooking-Free-200Flavorful-Allergies-Sensitivi/dp/B0031MA81A/ref=sr_1_1?ie=UTF8&qid=1289048318&sr=8-1

You will find so many awesome stuff in that book and its really easy to read...But as far as food goes, we buy Rice Dream Ice Cream, drink Rice Milk, Organicville condiments like ketchups, marinades and BBQ sauces. When we just statred eating like this that part was the hardest thing...food shopping. But with some searches online and a Whole Foods store...there is a lot of options, takes alot of work but like you said we are all heathlier for it! Also if you are looking for a bread that tastes just like normal bread without anything including YEAST, try Deland's Bakery items...the bread is FAB! They sell it at Whole foods, but you can find it online they are out of Florida. Another food item we use Best Life butter and also my newest find Veganise mayo - tastes JUST LIKE Hellmans, but dairy sugar gluten...everything FREE! I dont know how they did it, cause I tried making my own mayo and it tasted like POO! So I am very very happy :) Good Luck to you :) TRY THE CAKE YOU WILL LOVE IT ;-)

Re: Recipes

Check out clutenfreesociety.com. There is a cookbook on there that is great. It also explains why ANY grain, like oats and rice, should not be used either.

We are completely grain free, cow dairy free, egg free, and the list goes on...

So, I am searching for recipes that can serve as a substitute for things like bread, cookies, crackers... I have yet to find one that does not have rice, egg, milk, coconut (daughter's allergic), almond (allergic, too), or grain of any kind.

If you come across something I certainly will try it immediately!

Re: Recipes

Stacy, are you totally nut-free? I have a recipe for cashew milk that is good, you do have to strain it several times, but my kids loved it. I am not sure what you can use to replace eggs.

Re: Recipes

Hi, there. I'm looking to start the Virgin Diet, which seems to be **everything** free. Does anyone know of a good egg substitute for baking? Info I got indicates cornstarch and water for egg substitute, but I don't know how well that would work for baking. Looking for recipes that use xylitol and/or stevia leaf (the real thing, not the processed stuff most grocers sell), dairy-, egg-, soy-, peanut-, sugar-...free. Thanks!
