flat bread

Hi everyone, just found this group and am hoping someone might know of a flat bread recipe that is Dairy, nut, egg, soy and yeast free for my anaphylatic 1.5yr old. buying lots but would love to make them ourselves with fairly regular ingredients (i.e. not expensive, we are on a strict small budget) he can deal with gluten. Hmm.

great group, curious to know how those of you who are choosing this path are finding the impact of cleaner eating with your children?

Hi, Kathryn. I wish I had a recipe for you. I barely have any myself. My son needs to be gluten, casein, soy, egg, and yeast free. What a pain!

My son seems to be just under the radar with a lot of stuff. He was diagnosed with autism 2 years ago, but we only just recently started dietary intervention. It's not a drastic change for us, but it's a change. For the better. We still get some behaviors, but i think we're dealing with something else in addition. Not sure yet.

Anyway, if I come across anything, I'll let you know. I'm currently looking for a recipe for donuts, as Fastnacht Day is coming soon. :-)

I have a recipe which does include one egg, but I think I made it without the egg one time and it worked, maybe a little crumbly. Here is is:

2 cups quinoa flour
1 cup tapioca flour
Mix the above
Whisk 2 cups water gradually
(add one egg)
season with salt, garlic, and onion powder

Now, on a griddle or frying pan (well oiled) pour about 1/4 cup and in one sweeping circular motion with a spatula (like with a crepe) smooth it out to desired size. My husband also started making chips with these wraps by slicing them up and frying them. It may not be what you want without the egg but it has worked for us.

There is a mix at Whole Foods in the Italian section. It is made with ground chick peas and rosemary. You just add some olive oil and water and cook it. It is all natural and free of just about everything. We tried it and the thinner you cook it the crunchier it is. If you cook it thicker, it reminds me of polenta. You can still cut it but it is soft. So, experiment with it some and see what you think.

thanks stacey, i am in Australia so we do not have a Wholefoods Store. Most of premixes here have either soy or nuts.. have just posted a cake recipe that might be of interest. Kx
