I need Vegetarian recipes because Jeff has decided to be a vegetarian...I'm trying Eggplant Parmesan tomorrow night...Do you have any other recipes I could try?

I'll be on the look out...I just made a good Lentil Stew...and I also like making homemade spaghetti veggie sauce...I'll try to post those recipes soon.
