Ramen Noodle Stir-Fry (Extremely Budget Friendly)
For a long time when I was married to my first husband, I was very low on cash and food. When I was desperate for something for dinner, I came up with this recipe and it was a hit with all of my family, especially the kids! It is a great way to get them to eat veggies while hiding it in the cheap noodles they love to eat.
This recipe feeds about 4-5 people.
4-5 pkgs. any flavor ramen noodle
2 lbs of hamburger meat
either 1 lg. bag of frozen veggies (any variety) or any canned veggies you may have on hand.
1 small onion
1 Tbsp. butter
In large skillet, add butter and onions. Cook until translucent and add hanburger meat. Brown and drain grease.
Boil water and prepare ramen noodles according to package, about 3 minutes.
While the water is boiling and the meat has cooked, add the veggies to the meat mixture, once you have drained the grease.
Cook the veggies until tender.
Once the noodles are done, add the meat mixture to the drained noodles.
Once all of the ingredients are mixed, add all of the spice packets from each package of noodles.
Let sit on low heat for about 3-5 minutes, just until heated through, and season packets have been mixed.
Serve with bread or as a side.
Like I said, this is a very budget friendly recipe that uses ingredients from your pantry or freezer. The mixture will be very thick and filling, and if the mixture is too thick, you can add a little butter to loosen it or you can add a little milk or even half-and-half.
This recipe is also very easy to change; add your own spices to it rather than the spice packet. Try it out and see what your family thinks. I promise you that they will love it!
