Always roll your pastry dough on a sheet of wax paper or parchment paper on a covered flat surface, the dough won't tear or stick. It will be easier to cover you pie, cut the exact amount for a turnover, flip onto a removeable bottom tart part and etc. Such an easy useful tip!
