Multi-Purpose Pasta Insert

When preparing chicken stock, cook the bird in a large pasta pot with an insert. When the stock is done, just lift out the insert. It catches the meat and bones, but leaves all the liquid behind in the pot.

That has got to be the best tip I've heard in a long time! Too bad I dont' have a pasta insert... it might be worth getting one just for that!
