%3C/p%3E%3Cp%3EMorel%20Mushrooms%3C/p%3E%3Cp%3EWhen%20it%20comes%20to%20mushrooms,%20I%20try%20very%20hard%20not%20to%20be%20drawn%20into%20the%20%C3%BCber-fancy%20varieties%20that%20are%20available%20at%20Whole%20Foods%20and%20other%20gourmet%20shops%20because%20it%E2%80%99s%20too%20easy%20to%20start%20scooping%20them%20up%20and%20find%20myself%20with%20a%20bag%20of%20mushrooms%20that%20equates%20to%20half%20of%20our%20weekly%20grocery%20bill.%20%20It%E2%80%99s%20why%20I%20tend%20to%20stick%20to%20using%20a%20solid%20base%20of%20cremini%20mushrooms%20and%20then%20adding%20in%20only%20a%20little%20shiitake%20or%20oyster%20mushrooms%20for%20flavor%20whenever%20I%20need%20to%20make%20a%20dish%20that%20is%20heavy%20on%20the%20mushrooms.%3C/p%3E%3Cp%3EMorels,%20however,%20are%20a%20perfect%20exception%20to%20my%20no-crazy-expensive-mushroom%20rule,%20because%20not%20only%20are%20they%20delicious,%20they%20also%20happen%20to%20fall%20into%20that%20category%20of%20ephemeral%20foods%20that%20are%20only%20available%20for%20a%20few%20weeks%20out%20of%20the%20year,%20thereby%20making%20them%20completely%20irresistible.%3C/p%3E%3Cp%3EFairway%20had%20them%20on%20sale%20for%20$10.99%20a%201/4%20lb.,%20so%20I%20carefully%20selected%20a%20few%20choice%20specimens,%20made%20sure%20that%20I%20stayed%20well%20under%20that%20mark%20and%20ended%20up%20only%20paying%20a%20little%20over%20five%20dollars%20for%20the%20bunch.%20%20They%20sliced%20up%20nicely%20and%20made%20for%20a%20generous%20topping%20over%20our%20little%20pizza,%20and%20blended%20perfectly%20with%20the%20house-pulled%20mozzarella%20from%20Fairway.%20%20It%E2%80%99s%20a%20surprising%20and%20delightful%20way%20to%20beckon%20for%20spring,%20and%20perfect%20for%20the%20still-cool%20days%20that%20can%20allow%20for%20the%20oven%20to%20be%20turned%20onto%20full%20blast.%3C/p%3E%3Cp%3EPizza%20with%20Shrimp%20%22Fra%20Diavolo%22%3C/p%3E%3Cp%3EThe%20other%20pizza%20we%20had%20was%20one%20Michael%20dreamed%20up%20himself:%20%20he%20deemed%20it%20a%20shrimp%20fra%20diavolo%20pizza,%20a%20twist%20on%20the%20classic%20pasta%20dish%20that%20is%20surprisingly%20light%20and%20therefore%20appropriate%20as%20a%20first-course%20pizza.%20%20We%20basically%20took%20our%20normal%20pizza%20sauce%20and%20upped%20the%20heat%20via%20crushed%20red%20pepper,%20then%20threw%20some%20shrimp%20on%20top%20to%20cook%20while%20the%20pizza%20baked.%20%20This,%20I%20think,%20requires%20some%20more%20deliberation%20and%20another%20try%20before%20we%20post%20a%20recipe%E2%80%93it%E2%80%99s%20simply%20a%20visual%20aperitivo%20for%20now.%3C/p%3E%3Cp%3EPizza%20%22Bianca%22%20with%20Morel%20mushrooms,%20Gold%20cipollino%20onions,%20Garlic%20and%20Mozzarella%20and%20Asiago%20cheeses%3C/p%3E%3Cp%3EAs%20for%20the%20morel%20mushroom%20pizza,%20well,%20get%20hopping%E2%80%93the%20season%20doesn%E2%80%99t%20last%20that%20long,%20and%20you%20should%20definitely%20give%20this%20a%20try!%3C/p%3E%3Cp%3EPizza%20Bianca%20with%20Morel%20Mushrooms%20and%20Onions%3C/p%3E%3Cp%3EServes%202-3%3C/p%3E%3Cp%3E1/2%20recipe%20pizza%20dough%3C/p%3E%3Cp%3EAs%20always,%20preheat%20the%20oven%20on%20bake%20using%20the%20broil%20option%20on%20the%20temperature%20knob%20(aka%20the%20highest%20temperature%20you%20can%20go%E2%80%93but%20DON%E2%80%9DT%20BROIL%20THE%20PIZZA),%20and%20start%20stretching%20out%20the%20dough%20into%20a%2010%E2%80%B3-ish%20oval.%20%20When%20the%20dough%20is%20ready,%20add%20the%20cheese,%20mushrooms,%20garlic,%20and%20onions;%20lightly%20season%20with%20salt%20and%20pepper%20and%20drizzle%20with%20just%20a%20little%20olive%20oil.%20%20Bake%20for%20about%2012%20minutes,%20or%20until%20the%20cheese%20begins%20to%20brown.%20%20Take%20out,%20let%20rest,%20garnish%20with%20chives,%20slice,%20and%20serve!%3C/p%3E%3Cp%3EBuon%20apetito!%3C/p%3E){kind=link}
