%3C/p%3E%3Cp%3EMustard-marinated%20roasted%20chicken%3C/p%3E%3Cp%3EI%20can%E2%80%99t%20say%20I%E2%80%99m%20the%20most%20organized%20person,%20but%20one%20area%20in%20my%20life%20where%20I%20do%20crave%20order%20and%20lists%20is%20grocery%20shopping.%20My%20mom%20is%20a%20freaking%20ninja%20when%20it%20comes%20to%20it%E2%80%93not%20only%20does%20she%20write%20lists%20weekly,%20kept%20in%20a%20little%20stenography%20notebook,%20but%20she%20lists%20everything%20in%20the%20exact%20order%20she%E2%80%99ll%20find%20them%20in%20the%20store.%20By%20aisle.%20It%E2%80%99s%20hardcore%E2%80%93and%20she%20started%20doing%20it%20back%20when%20I%20was%20little%20and%20she%20needed%20to%20get%20through%20the%20store%20as%20quickly%20as%20possible%20before%20I%20started%20getting%20fussy.%3C/p%3E%3Cp%3EI%20am%20nowhere%20nearly%20this%20organized%20with%20lists,%20but%20I%20am%20pretty%20good%20about%20whipping%20out%20a%20Post-It%20or%20one%20of%20our%20restaurant%20waitstaff%20notebooks%20(you%20know,%20those%20guest%20check%20pads%20you%20can%20buy%20at%20Staples)%20and%20a%20Sharpie%20and%20meticulously*%20noting%20down%20everything%20we%20need%20for%20a%20meal.%3C/p%3E%3Cp%3E*or%20not-s0-meticulously%3C/p%3E%3Cp%3EConchiglie%20rigate%20with%20tomato,%20basil,%20garlic,%20onion%20and%20mozarella%20di%20bufula%3C/p%3E%3Cp%3EI%20hadn%E2%80%99t%20given%20any%20thought%20to%20dinner%20by%20the%20time%20we%20went%20to%20Fairway%20on%20Sunday%20afternoon,%20so%20we%20walked%20in%20and%20I%20was%20feeling%20antsy%E2%80%93I%20should%20have%20been%20grabbing%20ingredients%20as%20we%20walked%20past%20the%20various%20produce%20aisles,%20but%20instead%20we%20were%20just%20wandering%20about,%20in%20search%20of%20inspiration%20(Michael)%20and%20free%20samples%20(me).%20It%20got%20to%20the%20point%20where%20I%20was%20barred%20from%20trying%20anything%20else%20until%20I%20had%20%20come%20up%20with%20something%20to%20contribute%20to%20dinner.%3C/p%3E%3Cp%3EIn%20all%20fairness,%20there%20were%20a%20lot%20of%20samples.%20Besides%20my%20weekly%20visit%20to%20%E2%80%9Csay%20hello%20to%20the%20olive%20oils%E2%80%9D%20(i.e.%20a%20huge%20olive%20oil%20tasting%20area%20complete%20with%20bread%20bins%20to%20taste%20to%20one%E2%80%99s%20heart%E2%80%99s%20content)%20there%20was%20guacamole,%20salsa,%20sausages,%20and%20pulled%20pork%E2%80%93I%20mean,%20who%20would%20say%20no%20to%20all%20of%20that?%3C/p%3E%3Cp%3EBut%20I%20digress.%20I%20was%20definitely%20in%20the%20mood%20for%20pasta,%20but%20I%20wanted%20something%20light%20after%20having%20a%20rich%20lasagna%20the%20night%20before%20at%20my%20parents%E2%80%99%20house.%20A%20quickly-cooked%20sauce%20of%20tomatoes,%20basil,%20onion%20and%20garlic%20sounded%20good%20to%20both%20of%20us,%20and%20Michael%20had%20already%20picked%20out%20the%20chicken%20he%20wanted%20to%20roast,%20so%20we%20made%20short%20order%20of%20assembling%20the%20rest%20of%20the%20items%20we%20needed%20and%20promptly%20got%20out%20of%20the%20store%E2%80%A6including%20indulging%20in%20a%20ball%20of%20mozzarella%20di%20bufula.%20Normally%20Fairway%E2%80%99s%20own%20hand-pulled%20fresh%20mozzarella%20is%20just%20fine%20for%20us,%20but%20they%20were%20out%20of%20the%20salted%20kind%20we%20tend%20to%20prefer.%20So%20I%20plunked%20down%2011%20bucks%20for%20a%206oz%20ball,%20and%20frankly,%20it%20was%20worth%20every%20penny.%20But%20more%20on%20that%20later.%3C/p%3E%3Cp%3EThis%20is%20a%20sauce%20I%E2%80%99ll%20be%20sure%20to%20revisit%20time%20and%20time%20again%20over%20the%20summer%20because%20there%E2%80%99s%20not%20much%20to%20it%20and%20it%20could%20go%20well%20with%20any%20of%20our%20normal%20sides.%20It%20also%20gave%20me%20a%20fresh%20appreciation%20for%20balsamic%20vinegar%E2%80%93had%20I%20just%20stuck%20to%20using%20olive%20oil%20and%20maybe%20a%20splash%20of%20white%20vermouth,%20I%E2%80%99d%20be%20lacking%20the%20body%20that%20the%20dark%20vinegar%20brought%20to%20the%20party.%20Michael%E2%80%93an%20avowed%20vinegar%20enthusiast%E2%80%93thought%20the%20final%20product%20had%20a%20%E2%80%9Crestaurant-like%E2%80%9D%20quality%20to%20it,%20and%20I%E2%80%99m%20pretty%20sure%20it%E2%80%99s%20on%20account%20of%20the%20splashes%20of%20the%20stuff%20that%20coated%20the%20onions%20and%20tomatoes.%3C/p%3E%3Cp%3EThe%20mozzarella%20di%20bufula%20didn%E2%80%99t%20hurt%20either%E2%80%93added%20in%20after%20the%20pasta%20was%20plated,%20it%20was%20a%20soft%20counterpoint%20to%20the%20cooked%20sauce,%20and%20it%20the%20chunks%20nestled%20neatly%20into%20the%20shells%20along%20with%20the%20bits%20of%20tomato,%20basil%20and%20onion.%20While%20not%20a%20weekly%20kind%20of%20purchase,%20it%E2%80%99s%20definitely%20worth%20the%20occasional%20indulgence,%20and%20best%20saved%20for%20those%20late-summer%20tomatoes%20that%20define%20summertime%20perfection.%3C/p%3E%3Cp%3EEasy%20Summer%20Caprese%20Sauce%3C/p%3E%3Cp%3Eserves%204-6%3C/p%3E%3Cp%3EBring%20a%20large%20pot%20of%20water%20to%20boil,%20season%20well%20with%20salt,%20and%20then%20cook%20pasta%20about%20a%20minute%20or%20two%20less%20than%20package%20directions.%20Save%20a%20cup%20of%20cooking%20water%20to%20help%20make%20the%20sauce.%20Drain%20and%20set%20aside.%3C/p%3E%3Cp%3EMeanwhile,%20in%20a%20large%20saute%20pan,%20heat%20a%20couple%20of%20tablespoons%20of%20olive%20oil%20over%20medium%20heat,%20add%20onions%20and%20a%20little%20salt%20and%20cook%20until%20softened%20and%20translucent,%20about%20three%20minutes.%20Add%20garlic%20and%20crushed%20red%20pepper%20and%20cook%20for%20another%2030%20seconds%20to%20a%20minute,%20then%20add%20a%20few%20splashes%20of%20balsamic%20vinegar%20and%20toss%20to%20coat,%20another%202-3%20minutes.%20Add%20tomatoes%20and%20basil,%20toss,%20and%20splash%20with%20a%20little%20more%20vinegar%20and%20cook%20for%20about%20a%20minute%20or%20two.%20Then%20add%20pasta,%20using%20a%20little%20pasta%20water%20to%20help%20bring%20the%20sauce%20together,%20and%20toss%20to%20coat.%20Add%20to%20bowls%20and%20divide%20cheese%20among%20each%20serving%20and%20serve%20immediately.%3C/p%3E){kind=link}
