%3C/p%3E%3Cp%3EWild%20King%20Salmon%20with%20Sweet-and-Sour%20Shallots%3C/p%3E%3Cp%3EAfter%20all%20there%E2%80%99s%20a%20lot%20in%20that%20vegetarian%20fine%20flavour%20of%20things%20from%20the%20earth%20garlic%20of%20course%20it%20stinks%20after%20Italian%20organgrinders%20crisp%20of%20onions%20mushrooms%20truffles.%20Pain%20to%20the%20animal%20too.%20Pluck%20and%20draw%20fowl.%20Wretched%20brutes%20there%20at%20the%20cattlemarket%20waiting%20for%20the%20poleaxe%20to%20split%20their%20skulls%20open.%20Moo.%20Poor%20trembling%20calves.%20Meh.%20Staggering%20bob.%20Bubble%20and%20squeak.%20Butchers%E2%80%99%20buckets%20wobbly%20lights.%20Give%20us%20that%20brisket%20off%20the%20hook.%20Plup.%20Rawhead%20and%20bloody%20bones.%20Flayed%20glasseyed%20sheep%20hung%20from%20their%20haunches,%20sheepsnouts%20bloodypapered%20snivelling%20nosejam%20on%20sawdust.%20Top%20and%20lashers%20going%20out.%20Don%E2%80%99t%20maul%20them%20pieces,%20young%20one.%3C/p%3E%3Cp%3EHot%20fresh%20blood%20they%20prescribe%20for%20decline.%20Blood%20always%20needed.%20Insidious.%20Lick%20it%20up%20smokinghot,%20thick%20sugary.%20Famished%20ghosts.%3C/p%3E%3Cp%3EAh,%20I%E2%80%99m%20hungry.%3C/p%3E%3Cp%3E%E2%80%93James%20Joyce,%20Ulysses%20(chapter%208,%20%E2%80%9CThe%20Lestrygonians%E2%80%9D)%3C/p%3E%3Cp%3EOnward!%3C/p%3E%3Cp%3EEarlier%20this%20week,%20three%20mostly-unrelated%20but%20equally%20thought-provoking%20prompts%20caught%20my%20eye:%20a%20New%20York%20Times%20piece%20on%20the%20Spanish%20chefs%20filling%20the%20cocina%20de%20vanguardia%20void%20left%20with%20the%20closing%20of%20El%20Bulli,%20a%20professional%20chef%20waxing%20poetic%20on%20the%20superiority%20of%20home-cooked%20meals,%20and%20the%20weekly%20prompt%20for%20Serious%20Eats%E2%80%99%20Weekend%20Cook%20and%20Tell%20on%20essential%20cookbooks.%3C/p%3E%3Cp%3ELike%20I%20said:%20these%20are%20three%20fairly%20disparate%20topics,%20but%20they%20are%20all%20swirling%20in%20my%20head%20as%20I%20write%20this.%3C/p%3E%3Cp%3EI%E2%80%99ve%20touched%20on%20Adria%20and%20El%20Bulli%20before,%20and%20I%20won%E2%80%99t%20try%20to%20get%20into%20What%20It%20All%20Means%20that%20the%20restaurant%20is%20closing%20and%20turning%20into%20a%20culinary%20research%20facility%20because%20there%20are%20others%20who%20can%20do%20so%20with%20more%20eloquence%20and%20authority.%20But%20I%20felt%20his%20influence%20in%20the%20dish%20we%20made%20with%20some%20of%20our%20salmon%20from%20Copper%20River%20yesterday,%20as%20it%20was%20unconventional%20and%20creative,%20but%20still%20felt%20Spanish%20to%20the%20core%E2%80%93which%20is%20funny%20because%20from%20researching%20recipes%20in%20my%20traditional%20Spanish%20cookbooks,%20fresh%20salmon%20is%20not%20that%20commonly%20used.%20But%20leave%20it%20to%20my%20friends%20at%20Barcelona%20to%20take%20wild%20Alaskan%20salmon%20and%20shallots,%20apply%20some%20French%20and%20Japanese%20technique%20to%20them,%20and%20come%20up%20with%20a%20tapa%20that%20serves%20as%20the%20perfect%20showcase%20to%20wild%20salmon:%20the%20fish%20is%20cooked%20just%20enough%20and%20the%20shallots%20are%20a%20bright%20and%20slightly%20crunchy%20companion.%3C/p%3E%3Cp%3EThis%20recipe%20is%20a%20great%20example%20of%20why%20I%20love%20this%20cookbook%20so%20much:%20while%20this%20is%20a%20restaurant%20cookbook,%20you%20often%20don%E2%80%99t%20feel%20like%20you%E2%80%99re%20making%20restaurant%20food.%20It%E2%80%99s%20simply%20a%20collection%20of%20really%20well-thought-out%20recipes%20that%20you%20can%20make%20on%20a%20random%20Thursday%20night%20or%20as%20part%20of%20an%20elegant%20spread%20and%20the%20results%20mean%20you%20always%20eat%20well%20without%20eating%20to%20excess.%20It%E2%80%99s%20why%20this%20book%20is%20on%20the%20shelf%20closest%20to%20the%20kitchen,%20and%20why%20I%20could%20devote%20a%20whole%20category%20to%20its%20recipes%20here.%3C/p%3E%3Cp%3EIn%20short:%20go%20out%20this%20weekend%20and%20try%20this%20recipe.%20You%20won%E2%80%99t%20be%20disappointed.%3C/p%3E%3Cp%3EWild%20Alaskan%20Salmon%20Paillard%20with%20Sweet-and-Sour%20Shallots%3C/p%3E%3Cp%3Eadapted%20from%20The%20Barcelona%20Cookbook%3C/p%3E%3Cp%3EServes%202%20as%20a%20dinner,%204%20as%20a%20tapa%3C/p%3E%3Cp%3EFor%20the%20shallots:%20add%20the%20shallots%20to%20a%20medium%20saucepan%20and%20then%20cover%20with%20the%20mirin%20and%20bring%20the%20pot%20to%20a%20boil.%20Once%20the%20shallots%20have%20wilted%20but%20haven%E2%80%99t%20cooked%20through,%20remove%20from%20heat%20and%20add%20%20the%20peppercorns,%20vinegar%20and%20olive%20oil,%20stir%20well%20to%20combine%20and%20let%20cool.%20Transfer%20to%20a%20lidded%20container%20and%20refrigerate%E2%80%94the%20book%20recommends%202%20hours,%20but%20we%20didn%E2%80%99t%20have%20that%20time%20and%20cooled%20it%20in%20the%20fridge%20for%20about%20a%20half-hour.%20They%20can%20sit%20in%20the%20fridge%20for%20up%20to%204%20days,%20but%20when%20you%20make%20the%20paillards%20you%20want%20the%20shallots%20need%20to%20come%20back%20to%20room%20temperature%20so%20they%20won%E2%80%99t%20clash%20with%20the%20warm%20fish.%20Obviously.%3C/p%3E%3Cp%3EFor%20the%20paillards:%20you%20will%20want%20to%20cut%20the%20fillet%20into%20four%20half-inch%20slices%20on%20the%20bias%20(Michael%20did%20quite%20well%20with%20that%20here)%20and%20season%20with%20a%20little%20salt%20on%20each%20side.%20Heat%20the%20oil%20in%20a%20non-stick%20(or%20in%20our%20case%20a%20slightly%20more%20oiled%20saut%C3%A9%20pan)%20over%20high%20heat,%20and%20when%20ready%20add%20the%20salmon%20slices.%20Cook%20on%20each%20side%20for%20no%20more%20than%20one%20or%20two%20minutes%20(Michael%20did%20a%20little%20longer%20on%20the%20plate%20shown%20here%20to%20give%20the%20fish%20a%20little%20caramelization),%20remove%20from%20heat%20and%20plate%20immediately.%20Spoon%20some%20of%20the%20shallots%20over%20the%20fish%20and%20serve%20with%20a%20nice%20salad%20and%20a%20really%20simple%20starch%20such%20as%20bread.%3C/p%3E%3Cp%3E(Full%20disclosure:%20the%20fish%20was%20courtesy%20of%20Copper%20River%20Salmon,%20and%20we%20just%20really%20like%20Barcelona%20Wine%20Bar%20and%20their%20cookbook.)%3C/p%3E){kind=link}
