%3C/p%3E%3Cp%3EGazpacho%20andaluz/gazpaxo%20andal%C3%BAs%3C/p%3E%3Cp%3EOne%20of%20the%20things%20that%20was%20challenging%20during%20our%20trip%20to%20Barcelona%20last%20year%20was%20trying%20to%20stay%20well-hydrated.%20We%E2%80%99d%20be%20the%20obnoxious%20Americans%20carrying%20around%20the%20giant%201.5%20liter%20bottles%20of%20mineral%20water%20(sin%20gas)%20while%20we%20walked%20and%20went%20sightseeing,%20but%20the%20weather%20was%20warm,%20even%20for%20the%20first%20day%20of%20fall.%20Even%20then,%20nothing%20ever%20felt%20like%20it%20was%20properly%20slaking%20our%20thirst;%20that%20is,%20until%20I%20realized%20that%20the%20key%20to%20hydration,%20at%20least%20for%20me,%20was%20eating%20(drinking?)%20lots%20and%20lots%20of%20gazpacho.%3C/p%3E%3Cp%3EIt%20seemed%20odd%20at%20first%E2%80%93given%20its%20Andalusian%20provenance,%20I%20wasn%E2%80%99t%20expecting%20to%20find%20it%20as%20readily%20as%20I%20did%20in%20Barcelona%E2%80%93but%20I%E2%80%99m%20pretty%20sure%20the%20restaurateurs%20knew%20that%20few%20other%20foods%20are%20as%20fully%20restorative%20during%20hot%20weather%20as%20even%20a%20small%20serving%20of%20this%20soup.%20Thanks%20to%20unseasonably%20cool%20weather%20once%20we%20came%20home,%20though,%20my%20craving%20for%20gazpacho%20completely%20vanished%20and%20I%20didn%E2%80%99t%20think%20of%20making%20it%20again%20until%20a%20few%20weeks%20ago%20when%20we%20were%20in%20the%20middle%20of%20the%20first%20of%20a%20series%20of%20unpleasant%20heatwaves.%20Loosely%20following%20a%20recipe%20from%20Jos%C3%A9%20Andr%C3%A9s,%20I%20immediately%20remembered%20the%20appeal%20of%20this%20dish:%20an%20abundance%20of%20water-logged%20vegetables%20that%20help%20you%20stay%20hydrated,%20but%20do%20so%20while%20also%20helping%20you%20feel%20full.%20(Thanks,%20fiber!)%20That%20it%20requires%20minimal%20prep%20work%20and%20that%20a%20blender%20does%20all%20the%20work%20is%20icing%20on%20the%20cake.%3C/p%3E%3Cp%3EAlways%20a%20good%20tapa%20decision.%3C/p%3E%3Cp%3EI%E2%80%99ve%20made%20salmoreja%20in%20the%20past,%20and%20I%E2%80%99ve%20even%20made%20Andr%C3%A9s%E2%80%99s%20ajo%20blanco;%20while%20both%20are%20fantastic,%20neither%20would%20do%20in%20this%20situation.%20Salmoreja%20is%20thicker%20because%20it%20tends%20to%20call%20for%20bread%20in%20the%20soup%20itself;%20ajo%20blanco%20is%20made%20from%20almonds%20as%20well%20as%20bread%20and%20requires%20several%20rounds%20of%20boiling%20the%20nuts%20to%20make%20them%20easier%20to%20blend.%20This%20is%20literally%20some%20fruit%20and%20vegetables%20pureed%20with%20some%20sherry%20vinegar,%20salt,%20water,%20and%20olive%20oil%20and%20left%20to%20chill%20in%20the%20fridge.%20(The%20original%20recipe%20calls%20for%20straining%20it,%20but%20unlike%20an%20ajo%20blanco,%20that%E2%80%99s%20really%20not%20necessary%20here.)%20Add%20to%20it%20the%20chopped%20vegetable%20garnish,%20and%20you%E2%80%99re%20getting%20several%20servings%20of%20vegetables%20in%20one%20sitting;%20without%20the%20garnish,%20it%20basically%20becomes%20a%20really%20savory%20smoothie.%20Michael%20had%20the%20rather%20genius%20idea%20of%20frying%20the%20croutons%20in%20some%20leftover%20bacon%20fat,%20which%20I%20would%20recommend%20if%20you%E2%80%99re%20serving%20this%20to%20anyone%20who%20may%20be%20dubious%20about%20cold%20soup%20but%20would%20never%20pass%20up%20a%20nice%20piece%20of%20bacon.%3C/p%3E%3Cp%3EThe%20leaves%20of%20pearl%20onions%20were%20a%20nice%20touch,%20since%20the%20base%20soup%20doesn%E2%80%99t%20offer%20any%20sort%20of%20oniony%20flavor.%20(The%20lack%20of%20onion%20also%20is%20why%20I%20add%20a%20lot%20more%20garlic%20than%20the%20original%20recipe%20calls%20for,%20and%20it%20seems%20to%20do%20the%20trick%20nicely.)%3C/p%3E%3Cp%3EIf%20I%20could,%20I%20would%20basically%20walk%20around%20with%20some%20sort%20of%20Camelbak/wineskin/banana%20bag%20of%20this%20stuff%20all%20day,%20every%20day%20to%20drink%20as%20I%20pleased.%20In%20the%20meantime,%20I%E2%80%99ll%20just%20whip%20up%20another%20batch%20or%20two%20this%20week%20while%20we%20suffer%20through%20another%20stretch%20of%2090+-degree%20heat.%3C/p%3E%3Cp%3EGazpacho%20andalus/gazpaxo%20andal%C3%BAs%3C/p%3E%3Cp%3EAdapted%20from%20Tapas:%20A%20Taste%20of%20Spain%20in%20America%20by%20Jos%C3%A9%20Andr%C3%A9s%3C/p%3E%3Cp%3EAdd%20tomatoes,%20cucumber,%20bell%20pepper,%20garlic,%20sherry%20vinegar,%20and%20water%20to%20the%20blender%20carafe.%20Add%20some%20salt%20here%20as%20well,%20and%20then%20blend%20until%20smooth.%20Add%20the%20olive%20oil%20and%20a%20little%20more%20salt,%20and%20blend%20some%20more%20until%20very%20smooth.%20(Blend%20for%20less%20time%20and/or%20pulse%20if%20a%20chunkier%20soup%20is%20desired.)%20Store%20in%20refrigerator%20for%2030%20minutes%20until%20chilled.%3C/p%3E%3Cp%3EIn%20a%20small%20saucepan,%20add%20the%20bacon%20fat%20or%20olive%20oil%20and%20heat%20over%20medium-high%20heat.%20Gently%20fry%20the%20bread%20cubes%20until%20crispy%20on%20all%20sides,%20and%20place%20on%20a%20plate%20lined%20with%20paper%20towels%20to%20drain.%20Gently%20season%20with%20salt.%20If%20desired,%20gazpacho%20garnishes%20can%20be%20combined%20into%20one%20bowl%20or%20separated%20into%20several%20small%20ramekins%20if%20you%20would%20prefer%20to%20have%20a%20topping%20bar.%3C/p%3E%3Cp%3EPour%20gazpacho%20into%20bowls%20or%20glasses%20and%20serve%20with%20garnishes.%3C/p%3E){kind=link}
