%3C/p%3E%3Cp%3ECoca%20con%20Tomate,%20Calabac%C3%ADn%20y%20Queso%20Mah%C3%B3n%3C/p%3E%3Cp%3ESince%20we%20haven%E2%80%99t%20had%20Spanish%20food%20%E2%80%9Cin%20a%20week%E2%80%9D%20as%20Michael%20said%20to%20me%20Saturday,%20this%20weekend%E2%80%99s%20food%20festivities%20featured%20a%20lot%20of%20influence%20from%20the%20Iberian%20Peninsula,%20finishing%20with%20this%20delightful%20coca,%20or%20the%20Spanish%20version%20of%20pizza.%20The%20traditional%20coca%20is%20very%20minimal%20in%20ingredients%E2%80%93usually%20only%20one%20or%20two%20toppings%E2%80%93but%20I%E2%80%99ve%20read%20that%20more%20modern%20cocas%20do%20allow%20for%20some%20liberties%20in%20creativity,%20so%20taking%20some%20ideas%20from%20Cucinaria:%20Spain%20and%20Spanish%20Country%20Kitchen%20I%20decided%20our%20first%20Spanish%20coca%20would%20celebrate%20the%20height%20of%20the%20season:%20tomatoes%20and%20zucchini.%3C/p%3E%3Cp%3EIt%20was%20pretty%20damn%20awesome,%20but%20fraught%20with%20peril%20and%20some%20yelling.%3C/p%3E%3Cp%3EOur%20dinner%20from%20the%20night%20before%20had%20left%20us%20with%20some%20leftover%20queso%20mah%C3%B3n%20cheese,%20so%20a%20little%20went%20down%20on%20the%20blond-baked%20dough%20(the%20better%20to%20hold%20watery%20vegetables%20with)..and%20then%20we%20quickly%20encountered%20our%20awful%20nemesis,%20The%20Most%20Sensitive%20Smoke%20Alarm%20EVER.%20This%20thing%20will%20go%20off%20when%20freaking%20STEAM%20hits%20it%20(seriously),%20so%20we%E2%80%99ve%20become%20accustomed%20to%20having%20a%20plan%20ready%20to%20put%20it%20in%20hush%20mode%20when%20it%20goes%20haywire%20for%20our%20pizza-making%20adventures.%20We%E2%80%99re%20paranoid%20that%20we%E2%80%99re%20going%20to%20be%20(rightly)%20yelled%20at%20by%20the%20upstanding%20members%20of%20the%20FDNY%20for%20taking%20up%20their%20time%20thanks%20to%20our%20annoying%20smoke%20alarm%20alerting%20them%20to%20come%20to%20our%20apartment,%20so%20we%20make%20sure%20we%20have%20windows%20open%20and%20fans%20a-blowing%20to%20suction%20heat%20away%20from%20the%20source.%20We%20also%20make%20sure%20that%20we%20have%20a%20broom%20handle%20handy%20to%20poke%20the%20damn%20button%20that%20puts%20it%20into%20%E2%80%9Chush%20mode%E2%80%9D%20quickly%E2%80%93but%20of%20course%20the%20first%20time%20that%20this%20happened%20last%20night%20none%20of%20them%20were%20readily%20handy.%3C/p%3E%3Cp%3ESo%20we%20yelled.%20I%20was%20at%20the%20dining%20room%20table%20poking%20around%20on%20the%20internet,%20as%20my%20contribution%20to%20the%20meal%20was%20done%E2%80%93making%20dough%20and%20slicing%20and%20grating%20cheese,%20so%20every%20time%20the%20damn%20alarm%20sounded%20I%20floundered%20out%20of%20my%20chair%20to%20turn%20the%20thing%20off.%20Michael%20ended%20up%20underneath%20it%20at%20one%20point%20as%20it%20kept%20blasting%20no%20matter%20how%20many%20times%20we%20pushed%20the%20button%E2%80%A6and%20unsurprisingly%20he%20was%20a%20bit%20testy%20for%20a%20time%20afterward.%3C/p%3E%3Cp%3EPizza%20Margherita%20with%20Prosciutto%20Americano%3C/p%3E%3Cp%3EThe%20coca%20and%20the%20pizza,%20of%20course,%20helped%20mollify%20our%20moods%E2%80%93the%20former%20was%20light%20with%20just%20about%20the%20right%20amount%20of%20cheese,%20and%20the%20second%20was%20hearty%20and%20salty%20with%20just%20the%20right%20amount%20of%20tomatoes%20and%20basil%20to%20balance%20with%20the%20cheese%20and%20prosciutto.%20Now%20that%20the%20weather%20is%20turning%20cooler%20and%20the%20humidity%20is%20finally%20mellowing%20out%20we%20can%20start%20experimenting%20with%20pizzas%20again;%20we%20just%20have%20to%20do%20something%20about%20that%20stupid%20smoke%20alarm.%3C/p%3E%3Cp%3ETomato,%20Zucchini%20and%20Mah%C3%B3n%20Cheese%20Coca/Pizza%20Margherita%20with%20Prosciutto%20Americano:%3C/p%3E%3Cp%3Emakes%20one%20of%20each%3C/p%3E%3Cp%3E1%20recipe%20pizza%20dough,%20divided%3C/p%3E%3Cp%3EFor%20both%20the%20coca%20and%20the%20pizza%20we%20blond-baked%20them%20to%20let%20them%20accommodate%20the%20heavy,%20somewhat%20wet%20ingredients.%20To%20do%20this,%20preheat%20the%20oven%20to%20the%20highest%20temperature%20(on%20bake),%20making%20sure%20there%E2%80%99s%20an%20upturned%20sheet%20pan%20lightly%20dusted%20with%20cornmeal%20inside.%20Dust%20a%20pizza%20peel%20with%20cornmeal%20and%20stretch%20out%20each%20to%20desired%20size,%20and%20one%20at%20a%20time%20gently%20ease%20them%20into%20the%20oven%20from%20the%20pizza%20peel.%20Bake%20for%20about%206-8%20minutes%20until%20the%20dough%20is%20firm%20but%20not%20brown.%20Remove%20from%20the%20oven,%20let%20cool%20slighlty,%20and%20start%20assembling%20the%20pizzas:%3C/p%3E%3Cp%3EFor%20the%20coca:%20sprinkle%20the%20cheese%20onto%20the%20pie,%20then%20arrange%20the%20zucchini%20and%20then%20the%20tomatoes%20on%20top.%20Season%20with%20salt%20and%20a%20little%20olive%20oil,%20and%20then%20place%20back%20into%20the%20oven%20and%20cook%20until%20the%20tomatoes%20are%20soft%20and%20the%20zucchini%20have%20browned%20slightly,%20about%205-7%20minutes.%20About%20a%20minute%20before%20finishing,%20add%20the%20capers,%20and%20when%20the%20pie%20is%20ready,%20remove%20from%20the%20oven,%20let%20cool,%20slice%20and%20serve.%3C/p%3E%3Cp%3EFor%20the%20pizza:%20layer%20the%20cheese%20on%20first%20and%20then%20sprinkle%20the%20tomatoes%20and%20prosciutto%20on%20top.%20Season%20with%20salt%20(not%20as%20much%20is%20needed%20here%20because%20the%20prosciutto%20is%20salty)%20and%20add%20to%20the%20oven%20to%20let%20cook%20until%20the%20cheese%20is%20melted%20and%20the%20tomatoes%20are%20soft,%20about%205-7%20minutes.%20Remove%20from%20oven,%20add%20the%20basil,%20let%20cool%20and%20then%20slice%20and%20serve.%3C/p%3E){kind=link}
