%3C/p%3E%3Cp%3EAvocado%20and%20Jalapeno%20Salsa%20and%20Tuna%20and%20Avocado%20Ceviche%3C/p%3E%3Cp%3EOne%20of%20our%20other%20favorite%20places%20to%20go%20for%20a%20special%20night%20out%20was%20Pacifico,%20a%20nuevo%20Latino%20restaurant%20with%20a%20focus%20on%20seafood%20dishes.%20It%E2%80%99s%20part%20of%20a%20whole%20line%20of%20restaurants%20by%20Rafael%20Palomino;%20while%20the%20dishes%20all%20have%20their%20roots%20in%20Latin%20American%20cuisine,%20the%20dishes%20take%20a%20lot%20of%20creative%20license%20because%20they%20also%20derive%20inspiration%20from%20French,%20Mediterranean%20and%20Asian%20influences.%20When%20Michael%20declared%20that%20he%20wanted%20to%20eat%20avocados%20for%20dinner%20in%20some%20way,%20I%20somehow%20instinctively%20went%20to%20pick%20up%20our%20copies%20of%20Nueva%20Salsa%20and%20Viva%20La%20Vida,%20two%20great%20resources%20for%20interesting%20meals%20but%20two%20I%20had%20neglected%20for%20a%20while%20because%20of%20an%20influx%20of%20newer%20books%20captured%20my%20attention.%3C/p%3E%3Cp%3ELamb%20and%20Goat%20Cheese%20Tacos%3C/p%3E%3Cp%3ESo%20I%20did%20what%20I%20tend%20to%20do%20when%20we%20head%20down%20to%20the%20Union%20Square%20Greenmarket%20on%20a%20Saturday%20and%20lug%20along%20a%20cookbook%20with%20me%E2%80%A6and%20then%20read%20it%20on%20the%20subway.%20Yes,%20I%20do%20this.%20I%20get%20looks%20for%20it,%20I%20assure%20you,%20but%20I%20don%E2%80%99t%20care%E2%80%93because%20I%20then%20am%20armed%20with%20ideas%20that%20help%20determine%20what%20we%20purchase%20in%20the%20market%20and%20what%20we%20then%20purchase%20elsewhere%20for%20dinner%E2%80%93and%20I%20know%20how%20much%20to%20purchase.%20Suck%20it,%20people%20who%20give%20me%20weird%20looks!%3C/p%3E%3Cp%3EWe%20had%20picked%20out%20the%20avocado%20salsa%20with%20serranos%20(though%20we%20substituted%20them%20with%20jalapenos)%20prior%20to%20leaving,%20but%20I%20positioned%20the%20lamb-goat%20cheese%20tacos%20(originally%20empanadas%20in%20the%20book)%20to%20be%20easy%20to%20get%20at%20the%20Whole%20Foods%20in%20Union%20Square,%20and%20the%20Tuna-Avocado%20Ceviche%20would%20be%20(presumably)%20satisfied%20at%20Sea%20Breeze,%20which%20was%20conveniently%20on%20the%20way%20home.%20That%E2%80%99s%20how%20it%20came%20to%20be%E2%80%93we%20got%20things%20like%20green%20onions,%20avocados,%20tortillas,%20ground%20lamb,%20limes%20and%20whatnot%20at%20Whole%20Foods%20while%20procuring%20tomatoes,%20jalapenos%20and%20herbs%20a%20plenty%20at%20the%20Greenmarket.%20Getting%20sashimi-grade%20tuna%20at%20Sea%20Breeze%20was%20nothing%20simpler%E2%80%93a%20privilege%20I%20wish%20everyone%20had%20access%20to,%20if%20only%20to%20enjoy%20amazing%20tuna%20the%20way%20it%20should%20be%20enjoyed.%3C/p%3E%3Cp%3EFive%20o%E2%80%99clock%20came%20around,%20and%20the%20time%20to%20work%20commenced:%20Michael%20took%20the%20avocado-jalapeno-cucumber%20salsa%20to%20task,%20I%20focused%20on%20prepping%20the%20ingredients%20for%20the%20tacos,%20and%20then%20Michael%20did%20the%20ceviche%20quite%20nicely.%20They%20all%20came%20out%20brilliantly%E2%80%93but%20we%20learned%20a%20lesson%20from%20eating%20so%20much%20avocado%20before%20hand,%20namely%20that%20we%20had%20no%20room%20to%20eat%20more%20than%20one%20of%20the%20frankly%20delicious%20taco%20apiece.%3C/p%3E%3Cp%3EBelow%20I%20will%20share%20a%20recipe%20for%20the%20avocado-tuna%20ceviche%20because%20it%E2%80%99s%20fast%20and%20SO%20GOOD,%20and%20mainly%20because%20the%20lamb%20tacos%20deserve%20another%20try%20when%20we%E2%80%99re%20not%20preoccupied%20by%20all%20of%20that%20good%20fat.%3C/p%3E%3Cp%3EAvocado%20%E2%80%93%20Tuna%20Ceviche%3C/p%3E%3Cp%3EAdapted%20from%20Viva%20la%20Vida%3C/p%3E%3Cp%3EServes%204%20as%20an%20appetizer%3C/p%3E%3Cp%3ECombine%20tuna%20with%20lime%20and%20orange%20juice%20into%20a%20glass%20bowl,%20and%20refrigerate%20for%2015%20minutes.%20Add%20the%20rest%20of%20the%20ingredients%20and%20then%20refrigerate%20for%20an%20additional%2015%20minutes.%20Serve%20when%20completely%20chilled.%3C/p%3E%3Cp%3E%C2%A1Buen%20provecho!%3C/p%3E){kind=link}
