.%3C/p%3E%3Cp%3ELinguini%20with%20Anchovies,%20Tomatoes%20and%20Tarragon%3C/p%3E%3Cp%3EPasta%20has%20become%20a%20once-a-week%20thing%20at%20our%20household,%20a%20truce%20of%20sorts%20to%20satisfy%20my%20cravings%20for%20it%20and%20Michael%E2%80%99s%20desire%20not%20to%20eat%20too%20much%20of%20it,%20so%20I%20am%20now%20determined%20to%20make%20the%20absolute%20most%20of%20every%20opportunity%20I%20can%20get%20to%20enjoy%20it.%20%20While%20this%20has%20led%20me%20into%20a%20state%20of%20nearly%20paralyzing%20indecision%20as%20I%20fret%20over%20what%20length%20and%20shape%20to%20use%20in%20order%20to%20maximize%20the%20other%20players%20in%20the%20dish,%20it%20has%20encouraged%20me%20to%20dive%20into%20cookbooks%20again%20to%20try%20any%20new%20combination%20I%20can%20get%20my%20little%20hands%20on.%3C/p%3E%3Cp%3EEnter%20one%20of%20my%20newest%20cookbook%20additions:%20%20Sicily:%20%20Culinary%20Crossroads.%20%20This%20is%20part%20of%20a%20series%20meant%20to%20explore%20the%20hallmark%20dishes%20that%20differentiate%20each%20region%20of%20Italy,%20and%20until%20recently%20has%20only%20been%20available%20in%20Italian.%20%20When%20I%20stumbled%20across%20this%20over%20Thanksgiving%20while%20browsing%20Amazon,%20two%20things%20came%20to%20mind:%20%20that%20it%20would%20make%20a%20perfect%20gift%20for%20my%20mother-in-law%20(who%20is%20half-Sicilian),%20and%20that%20I%20wanted%20a%20copy%20for%20our%20kitchen%20as%20well.%20%20It%E2%80%99s%20not%20a%20huge%20tome,%20nor%20is%20it%20packed%20to%20the%20gills,%20Silver%20Spoon%20style,%20with%20recipes,%20but%20the%20ones%20that%20are%20included%20are%20simple,%20inspiring%20peasant%20food.%3C/p%3E%3Cp%3EIn%20my%20reading%20for%20work%20on%20trends%20(especially%20food%20trends),%20the%20idea%20of%20%E2%80%9Ckeeping%20it%20real%E2%80%9D%20in%20the%20kitchen%20is%20expected%20to%20be%20very%20big%20for%202010:%20%20now%20that%20we%20have%20returned%20to%20our%20kitchens%20and%20have%20gotten%20back%20in%20the%20habit%20of%20cooking,%20we%E2%80%99re%20no%20longer%20only%20going%20to%20want%20%E2%80%9Ceasy%E2%80%9D%20to%20prepare%20meals.%20%20Instead,%20we%E2%80%99re%20going%20to%20strive%20to%20make%20more%20things%20completely%20from%20scratch%20and%20have%20pantries%20filled%20with%20foods%20that%20allow%20us%20a%20flexibility%20to%20cook%20with%20what%20we%20have%20on-hand.%20%20It%E2%80%99s%20a%20bit%20of%20an%20ambitious%20statement%20given%20that%20the%20words%20%E2%80%9Cfast,%E2%80%9D%20%E2%80%9Ceasy,%E2%80%9D%20%E2%80%9Csimple%E2%80%9D%20(usually%20followed%20by%20at%20least%20one%20%E2%80%9Csuper%E2%80%9D)%20are%20still%20the%20big%20buzzwords%20in%20much%20of%20mainstream%20food%20media,%20but%20one%20can%20be%20optimistic,%20no?%3C/p%3E%3Cp%3EThe%20recipe%20below,%20I%20think,%20really%20embraces%20this%20trend,%20because%20while%20it%20is%20not%20at%20all%20(I%20think)%20what%20the%20original%20instructions%20laid%20out,%20it%20shows%20that%20a%20little%20creativity%20and%20ingenuity%20can%20still%20make%20for%20a%20pretty%20delicious%20dinner.%20%20We%20had%20anchovy%20fillets%20leftover%20from%20New%20Year%E2%80%99s%20still%20in%20the%20house,%20so%20when%20I%20saw%20this%20(well,%20the%20original%20recipe)%20in%20Sicily,%20I%20knew%20that%20it%20would%20be%20perfect%20in%20using%20those%20guys%20up,%20even%20if%20we%20weren%E2%80%99t%20going%20to%20be%20adhering%20strictly%20to%20the%20cookbook%E2%80%99s%20instructions.%20%20The%20tarragon%20we%20had%20was%20still%20good%20and%20I%20had%20no%20intention%20to%20waste%20it,%20so%20that%20stood%20in%20for%20the%20parsley%20originally%20asked%20for.%20%20The%20real%20kicker,%20though%20was%20bringing%20everything%20to%20a%20boil%E2%80%93perhaps%20an%20ingredient%20was%20left%20out%20in%20the%20translation,%20but%20as%20far%20as%20I%20could%20see%20there%20was%20nothing%20in%20that%20pan%20that%20could%20effectively%20come%20to%20any%20sort%20of%20boil.%20%20So%20in%20went%20some%20white%20wine.%20%20Perhaps%20the%20final%20result%20wasn%E2%80%99t%20%E2%80%9Cauthentic%E2%80%9D%20in%20the%20way%20the%20author%20intended,%20but%20I%20think%20it%20maintained%20another%20kind%20of%20purity%20in%20that%20we%20worked%20with%20what%20we%20had%20instead%20of%20running%20around%20to%20create%20the%20correct%20dish.%3C/p%3E%3Cp%3ELinguini%20with%20Anchovies,%20Tomatoes%20and%20Tarragon%3C/p%3E%3Cp%3Eheavily%20adapted%20from%20Sicily:%20%20Culinary%20Crossroads%3C/p%3E%3Cp%3EAdd%20about%20two%20tablespoons%20of%20olive%20oil%20to%20a%20skillet%20and%20heat,%20and%20then%20add%20the%20onions%20and%20saute%20util%20they%20are%20golden.%20%20Add%20the%20fish,%20garlic%20and%20tomatoes,%20add%20some%20salt%20to%20taste,%20and%20add%20the%20tarragon%20and%20white%20wine%20and%20bring%20to%20a%20boil.%20%20Once%20it%20is%20boiling,bring%20down%20to%20a%20simmer%20and%20cook%20for%20about%2015%20minutes.%3C/p%3E%3Cp%3EIn%20the%20meantime,%20cook%20the%20pasta%20until%20a%20minute%20or%20two%20earlier%20than%20package%20directions,%20and%20add%20to%20the%20skillet%20and%20toss%20generously.%20%20If%20desired,%20you%20can%20add%20a%20little%20Parmigiano-Reggiano%20%E2%80%93I%20find%20that%20the%20cheese%20cuts%20the%20saltiness%20of%20the%20fish%20and%20adds%20a%20slight%20buttery%20flavor%20to%20the%20dish,%20even%20though%20cheese%20and%20seafood%20normally%20shouldn%E2%80%99t%20go%20together.%3C/p%3E){kind=link}
