.%3C/p%3E%3Cp%3EOrechiette%20alla%20Zucchine%3C/p%3E%3Cp%3EToday%20marks%20our%20second%20wedding%20anniversary,%20so%20we%20spent%20this%20past%20weekend%20celebrating%20it%20in%20the%20best%20way%20we%20know%20how:%20through%20food.%20Saturday%E2%80%99s%20dinner%20was%20a%20bit%20of%20an%20epic%20meal%20(so%20much%20that%20we%20both%20feel%20compelled%20to%20write%20about%20it),%20but%20last%20night%20I%20wanted%20to%20give%20a%20nod%20to%20where%20we%20spent%20our%20honeymoon%E2%80%93mainly%20because%20I%20love%20any%20excuse%20to%20make%20a%20nice%20northern%20Italian%20meal%20at%20this%20time%20of%20year.%3C/p%3E%3Cp%3EOne%20of%20my%20favorite%20gifts%20from%20my%20shower%20was%20a%20copy%20of%20Autumn%20in%20Piemonte,%20a%20lovely%20travel%20guide/cookbook%20that%E2%80%99s%20filled%20with%20gorgeous%20photography%20of%20both%20the%20Piemonetese%20countryside%20as%20well%20as%20down%20the%20streets%20of%20uber-chic%20Torino,%20and%20while%20flipping%20through%20it%20to%20look%20for%20a%20recipe%20to%20catch%20my%20eye%20I%20was%20struck%20with%20the%20idea%20to%20have%20a%20sort%20of%20city/country%20dinner%20hybrid:%20a%20little%20snack%20to%20pair%20with%20a%20lovely%20sipping%20cocktail%20that%20would%20be%20reminiscent%20of%20what%20you%E2%80%99d%20get%20during%20aperitivi%20in%20Torino,%20paired%20with%20a%20more%20rustic%20dinner%20of%20a%20simple,%20hearty%20pasta%20and%20roasted%20chicken.%20Today,%20I%20will%20share%20with%20you%20the%20pasta%20I%20made,%20and%20tomorrow,%20the%20savory%20biscuits%20that%20preceded%20it.%3C/p%3E%3Cp%3EThe%20outskirts%20of%20Acqui%20Terme%3C/p%3E%3Cp%3EWith%20Michael%20handling%20the%20roasted%20chicken,%20I%20took%20care%20of%20the%20snacks%20and%20the%20pasta%20dish.%20Both,%20honestly,%20are%20incredibly%20easy%20and%20while%20definitely%20on%20the%20substantial%20side,%20totally%20worth%20the%20calories.%20This%20orechiettei%20alla%20zucchine%20is%20nothing%20more%20than%20a%20carbornara%20that%20replaces%20the%20bacon%20with%20zucchini%20and%20garlic,%20and%20it%E2%80%99s%20perfect%20for%20this%20time%20of%20year:%20the%20gently%20fried%20zucchini%20balances%20the%20richness%20of%20the%20fresh%20eggs%20and%20cheese,%20adding%20texture%20and%20just%20the%20right%20amount%20of%20lightness.%20It%E2%80%99s%20kind%20of%20like%20how%20it%E2%80%99s%20pretty%20easy%20to%20get%20away%20with%20walking%20around%20outside%20in%20a%20sweater%20and%20skirt%20on%20a%20sunny%20day%20and%20neither%20feel%20too%20hot%20nor%20too%20cold%E2%80%93and%20that%E2%80%99s%20something%20I%20did%20quite%20a%20bit%20of%20while%20walking%20around%20Acqui%20Terme%20and%20Torino.%3C/p%3E%3Cp%3EWhat%20I%20love%20the%20most%20about%20Autumn%20in%20Piemonte%20is%20that%20the%20recipes%20really%20capture%20the%20flavor,%20richness%20and%20simplicity%20in%20Piemontese%20cooking%E2%80%93an%20easy%20(and%20decidedly%20cheaper)%20way%20to%20be%20taken%20back%20to%20that%20wonderful%20region%20of%20Italy%20whenever%20I%20may%20want%20or%20need%20it.%3C/p%3E%3Cp%3EOrechiette%20alla%20Zucchine%3C/p%3E%3Cp%3Eadapted%20from%20Autumn%20in%20Piemonte,%20serves%202%3C/p%3E%3Cp%3EIn%20a%20saute%20pan,%20heat%20oil%20over%20medium%20heat%20and%20add%20garlic%20and%20zucchini%20and%20a%20little%20salt,%20frying%20until%20slightly%20brown%20but%20still%20a%20little%20crisp.%20Take%20off%20of%20the%20heat%20and%20set%20aside.%20Meanwhile,%20bring%20a%20large%20pot%20of%20water%20to%20boil,%20season%20generously%20with%20salt,%20and%20add%20pasta.%20While%20the%20pasta%20cooks,%20whisk%20together%20the%20eggs,%20cheese%20and%20a%20little%20salt%20and%20pepper;%20when%20the%20pasta%20is%20done%20(about%202%20minutes%20less%20than%20package%20recommendations)%20drain%20and%20then%20add%20to%20the%20pan%20with%20the%20garlic%20and%20zucchini%20over%20medium%20heat,%20and%20then%20carefully%20add%20the%20egg%20and%20cheese%20mixture,%20stirring%20and%20tossing%20to%20coat.%20Serve%20immediately.%3C/p%3E){kind=link}
