%3C/p%3E%3Cp%3EPan%20con%20Tomate%20(Tomato%20Bread)%3C/p%3E%3Cp%3EThere%E2%80%99s%20so%20much%20to%20share%20from%20Saturday%E2%80%99s%20dinner%20that%20it%20felt%20appropriate%20to%20divide%20and%20conquer:%20I%20took%20on%20the%20bread-based%20tapas,%20while%20Michael%20handled%20the%20shellfish.%20One%20of%20my%20birthday%20gifts%20was%20a%20copy%20of%20The%20Book%20of%20Tapas%20and%20I%20knew%20that%20I%E2%80%99d%20want%20to%20dive%20in%20and%20start%20making%20dishes%20from%20it%20straightaway.%20Five%20recipes,%20one%20loaf%20of%20bread%20and%20some%20pretty%20interesting%20ingredients%20later,%20it%E2%80%99s%20clear%20that%20this%20book%20will%20make%20many%20appearances%20on%20our%20dining%20room%20table%20and%20here%20on%20this%20blog.%3C/p%3E%3Cp%3EThe%20only%20one%20I%20chose%20for%20this%20selection%20that%20was%20even%20remotely%20familiar%20was%20pan%20con%20tomate,%20though%20even%20that%20was%20a%20little%20new%20to%20me%20because%20I%E2%80%99ve%20seen%20it%20in%20other%20Spanish%20cookbooks%20as%20just%20tomato%20rubbed%20onto%20toast.%20I%E2%80%99ve%20seen%20some%20Food%20Network%20hosts%20also%20add%20on%20ham%20(though%20not%20always%20serrano),%20but%20naturally%20none%20of%20them%20told%20you%20to%20add%20on%20the%20anchovies%E2%80%93too%20exotic,%20I%20guess,%20for%20the%20average%20Food%20Network%20viewer%20(at%20least%20the%20one%20that%20the%20powers%20that%20be%20have%20in%20their%20heads).%3C/p%3E%3Cp%3ETapas%20de%20Higos,%20Anchoas%20y%20Queso%20(Fig,%20Anchovy%20and%20Cheese%20Tapa)%3C/p%3E%3Cp%3EWe%20began%20the%20meal,%20though,%20with%20a%20bite%20of%20the%20unknown%20(though%20the%20components%20to%20make%20it%20are%20no%20strangers%20to%20our%20kitchen):%20a%20tapa%20of%20figs,%20anchovies%20and%20goat%20cheese.%20The%20goat%20cheese,%203%20anchovy%20fillets%20and%20a%20clove%20of%20garlic%20are%20pounded%20together%20in%20a%20mortar%20to%20make%20a%20spread,%20then%20smeared%20onto%20a%20toast%20that%E2%80%99s%20been%20brushed%20with%20a%20little%20olive%20oil%20and%20topped%20with%20one%20or%20two%20figs%20(depending%20how%20large%20your%20bread%20slices%20are).%20That%E2%80%99s%20it%E2%80%93and%20it%20works.%20Every%20ingredient%20brings%20something%20separate%20to%20the%20party,%20working%20in%20harmony%20to%20deliver%20a%20savory,%20vaguely%20sweet%20bite%20that%E2%80%99s%20unusual,%20but%20so%20good.%20The%20fact%20that%20it%E2%80%99s%20also%20a%20cinch%20to%20make%E2%80%A6well,%20it%E2%80%99s%20one%20of%20those%20dishes%20that%20you%E2%80%99d%20serve%20to%20dinner%20guests%20who%20fancy%20themselves%20%E2%80%9Cgourmands%E2%80%9D%20or%20foodies%20(shudder)%20and%20you%20want%20to%20impress.%3C/p%3E%3Cp%3EAs%20for%20the%20second%20round:%20it%E2%80%99s%20hard%20not%20to%20like%20tomato%20and%20garlic-rubbed%20toast%20topped%20with%20serrano%20ham%20and%20anchovies.%20The%20anchovies,%20by%20the%20by,%20are%20essential%20in%20making%20this%20tapa%20work;%20again,%20there%E2%80%99s%20no%20salt%20thanks%20to%20the%20cured%20ham%20and%20the%20anchovies,%20and%20really,%20the%20ham%20by%20itself%20is%20not%20enough.%3C/p%3E%3Cp%3ETorrada%20Mallonquina%20(Majorcan%20Toast)%3C/p%3E%3Cp%3EThe%20best%20was%20saved%20for%20last,%20at%20least%20with%20regards%20to%20the%20bread-centric%20tapas,%20with%20the%20Majorcan%20toast.%20This%20came%20from%20the%20end%20of%20the%20book,%20where%20celebrated%20Spanish%20chefs%20contributed%20two%20or%20three%20of%20their%20favorite,%20inventive%20tapas%20to%20the%20book%20(much%20like%20the%20crazy%20menus%20you%20find%20in%20The%20Silver%20Spoon%20from%20acclaimed%20Italian%20chefs)%20and%20this%20in%20particular%20came%20from%20AlbertAdri%C3%A0,%20also%20known%20as%20Ferran%20Adri%C3%A0%E2%80%99s%20brother%20and%20former%20partner%20in%20El%20Bulli.%20To%20put%20it%20simply,%20it%E2%80%99s%20a%20combination%20of%20sobrassada%20(a%20mushy,%20paprika-infused%20cured%20sausage%20that%20is%20AWESOME%20and%20a%20tomato%20dressing%20that%20calls%20for%20sugar,%20if%20all%20things.%20I%20subbed%20thyme%20in%20for%20the%20prescribed%20fresh%20oregano%20because%20I%20got%20to%20pick%20some%20up%20at%20Fairway%E2%80%A6but%20otherwise%20everything%20was%20very%20authentic.%20Michael%20deemed%20it%20the%20best%20of%20the%20bunch,%20and%20I%E2%80%99m%20inclined%20to%20agree.%3C/p%3E%3Cp%3ESo%20here%E2%80%99s%20the%20recipe!%3C/p%3E%3Cp%3ETorrada%20Mallonquina%20(Majorcan%20Toast)%3C/p%3E%3Cp%3EServes%202,%20adjust%20as%20necessary%3C/p%3E%3Cp%3EAdapted%20from%20The%20Book%20of%20Tapas%3C/p%3E%3Cp%3E6%20slices%20of%20narrow%20bread%20like%20a%20baguette%3C/p%3E%3Cp%3EPut%20broiler%20on%20and%20toast%20the%20breads%20on%20one%20side%20for%20about%202%20minutes%20(especially%20if%20your%20top%20rack%20is%20right%20up%20against%20the%20broiler)%20or%20until%20they%20are%20golden%20brown.%20In%20the%20meantime,%20combine%20in%20a%20bowl%20the%20tomatoes,%20salt,%20thyme/oregano%20and%20sugar%20and%20let%20sit.%20When%20the%20toasts%20are%20ready,%20spread%20the%20sobrassada%20across%20the%20warm%20toasts,%20arrange%20on%20the%20plate%20and%20then%20dress%20them%20with%20the%20tomato%20mixture.%20Serve%20immediately.%3C/p%3E%3Cp%3E%C2%A1Buen%20provecho!%3C/p%3E){kind=link}
