.%3C/p%3E%3Cp%3ESobrasada%20Tapa%3C/p%3E%3Cp%3EI%20had%20it%20in%20my%20head%20to%20make%20brunch%20on%20Saturday.%20We%20never%20eat%20brunch%E2%80%93I%20eat%20breakfast%20when%20I%20get%20to%20work,%20and%20Michael%20tends%20to%20only%20have%20oatmeal%20on%20hand,%20and%20fighting%20the%20crowds%20on%20Broadway%20to%20enjoy%20overpriced%20eggs%20and%20bacon%20holds%20little%20appeal%20for%20us.%20Sometimes,%20though,%20we%E2%80%99ll%20make%20it%20when%20friends%20are%20staying%20with%20us%20and%20that%E2%80%99s%20always%20fun,%20but%20it%E2%80%99s%20also%20a%20lot%20of%20work.%20So%20the%20idea%20of%20making%20a%20few%20small%20tapas%20for%20brunch%20had%20immediate%20appeal%20for%20me:%20filling%20but%20not%20overwhelmingly%20so.%20Michael%20tends%20to%20just%20eat%20a%20few%20hard-boiled%20eggs%20on%20weekend%20mornings%20to%20get%20him%20through%20until%20dinnertime,%20so%20using%20that%20as%20a%20base%20for%20ideas,%20I%20flipped%20through%20The%20Book%20of%20Tapas,%20made%20a%20shopping%20list,%20and%20on%20Saturday%20morning%20got%20to%20work.%3C/p%3E%3Cp%3EThe%20sobrasada%20tapa%20pictured%20above%20was%20by%20far%20my%20favorite%E2%80%93and%20that%20includes%20the%20tapa%20that%20I%20made%20with%20smoked%20salmon,%20for%20crying%20out%20loud!%20It%20was%20by%20far%20the%20easiest%20of%20the%20three%20to%20make,%20though,%20and%20when%20it%20comes%20to%20making%20a%20brunch%20spread%20at%20home,%20that%E2%80%99s%20really%20important.%20%20When%20you%20already%20have%20a%20nice%20amount%20of%20sobrasada%20in%20your%20fridge%20(thanks%20to%20the%20awesome%20guy%20at%20Despana%20advising%20you%20to%20buy%20the%20whole%20end%20of%20the%20log,%20leaving%20just%20enough%20for%20this%20after%20the%20last%20round%20of%20tapas),%20all%20that%20you%20have%20to%20do%20is%20let%20it%20come%20to%20room%20temperature,%20mix%20it%20with%20cubes%20of%20butter,%20and%20then%20smear%20it%20onto%20toasts%20made%20from%20a%20French%20baguette%20and%20bake%20until%20the%20butter%20has%20melted.%20When%20all%20you%20have%20to%20do%20is%20toast%20a%20handful%20of%20almonds%20and%20chop%20them%20up%20to%20use%20as%20a%20topping,%20there%E2%80%99s%20really%20nothing%20simpler%20to%20whip%20up.%20Sausage,%20nuts%20and%20bread%E2%80%93to%20quote%20the%20Barefoot%20Contessa,%20how%20easy%20is%20that?%3C/p%3E%3Cp%3ERed%20Bell%20Pepper,%20Egg%20and%20Anchovy%20Salad%3C/p%3E%3Cp%3EThe%20other%20two%20dishes%20required%20the%20boiling%20of%20quite%20a%20few%20eggs.%20The%20red%20pepper,%20anchovy%20and%20egg%20salad%20was%20relatively%20simple%20(it%20also%20included%20tomatoes%20and%20olives,%20the%20latter%20I%20swapped%20out%20for%20capers)%20and%20I%20used%20any%20eggs%20that%20didn%E2%80%99t%20peel%20perfectly%20for%20the%20salad.%20It%20was%20good%E2%80%93Michael%20took%20the%20salad%20to%20task%20on%20Sunday%20after%20it%20could%20sit%20for%20a%20while%E2%80%93but%20the%20hard-boiled%20eggs%20with%20smoked%20salmon%20was%20the%20most%20interesting%20of%20the%20tapas%E2%80%A6in%20more%20ways%20than%20one.%3C/p%3E%3Cp%3EHard-Boiled%20Eggs%20wth%20Smoke%20Salmon%3C/p%3E%3Cp%3ESo%20this%20one%20required%20me%20to%20make%20my%20own%20mayonnaise.%20The%20problem%20that%20came%20about%20was%20that%20I%20couldn%E2%80%99t%20make%20it%20in%20the%20blender%20the%20way%20I%20thought%20I%20could%20(as%20that%E2%80%99s%20how%20Michael%20has%20made%20it%20in%20the%20past)%20because%20it%20needed%20to%20be%20thick%20and,%20well,%20the%20blender%20method%20does%20not%20work%20well%20in%20that%20regard.%20The%20mayo-salmon%20blend%20I%20attempted%20to%20make%20was%20way%20too%20thin%20and%20the%20sauce%20kept%20breaking,%20making%20it%20all%20but%20unusable.%20Since%20I%20had%20enough%20leftover%20smoked%20salmon%20to%20salvage%20the%20dish,%20I%20drizzled%20a%20little%20of%20the%20homemade%20mayo%20(that%20should%20have%20been%20thick%20enough%20to%20pipe%E2%80%93not%20this%20one!)%20over%20a%20smidgen%20of%20the%20real%20thing%20and%20topped%20it%20all%20with%20the%20wild%20salmon%20roe%20that%20I%20purchased%20from%20Balducci%E2%80%99s.%20Those%20salty%20little%20balls%20of%20salmon%20made%20this%20dish,%20as%20I%20finally%20understand%20the%20appeal%20of%20the%20caviar%20structure,%20of%20the%20explosion%20of%20flavor%20that%20bursts%20into%20your%20moth%20as%20you%20bite%20into%20each%20egg.%20I%20can%20see%20why%20turning%20other%20foods%20into%20%E2%80%9Ccaviar%E2%80%9D%20via%20molecular%20gastronomy%20methods%20has%20been%20a%20thing%20for%20some%20time%20now,%20because%20there%20are%20few%20other%20foods%20that%20deliver%20flavor%20in%20this%20way%20naturally%20and%20it%E2%80%99s%20an%20intense%20experience.%20And%20really,%20just%20pairing%20these%20little%20salmon%20eggs%20over%20the%20eggs%20themselves%20would%20taste%20pretty%20good%20on%20their%20own%E2%80%93though%20I%20always%20love%20an%20excuse%20to%20snack%20on%20some%20fine%20smoked%20salmon.%20But%20in%20the%20spirit%20of%20ending%20things%20on%20a%20positive%20note,%20I%E2%80%99ll%20leave%20you%20with%20the%20easiest%20of%20the%20three%20tapas%20I%20made%20Saturday%20morning,%20because%20how%20can%20anyone%20argue%20with%20the%20combination%20of%20sausage,%20butter,%20bread%20and%20almonds?%20Yep,%20that%E2%80%99s%20what%20I%20thought.%3C/p%3E%3Cp%3ESobrasada%20Tapa%3C/p%3E%3Cp%3EAdapted%20from%20The%20Book%20of%20Tapas%3C/p%3E%3Cp%3E12%20slices%20from%20a%20French%20baguette%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%20degrees.%20Arrange%20bread%20slices%20onto%20a%20baking%20sheet%20and%20bake%20for%20about%202-3%20minutes%20until%20slightly%20browned.%20In%20the%20meantime,%20use%20your%20fingers%20to%20mash%20together%20the%20butter%20and%20the%20sausage%20into%20a%20sort%20of%20mixture,%20and%20then%20smear%20as%20evenly%20as%20possible%20onto%20the%20toasts.%20This%20will%20be%20kind%20of%20messy%20but%20it%20also%20doesn%E2%80%99t%20take%20long.%20Place%20the%20toasts%20back%20into%20the%20oven%20for%20another%205-8%20minutes%20to%20let%20the%20butter%20melt,%20remove,%20garnish%20with%20the%20almonds%20and%20serve.%3C/p%3E){kind=link}
