Receta 10 Minute Mexican Rice
During the busy holiday season, I find myself having little time to cook because I’m rushing to one holiday activity to another. Normally I’d be fine taking my family out to eat, but we have a refrigerator full of holiday leftovers going to waste! Instead, we warm little bits of leftover turkey, roast beef, or ham, combine it with some Mexican style cheese, avocado slices, and salsa, wrap it in a tortilla or burrito and make tacos for dinner.
You can make taco night even more special by making a side dish of restaurant style Mexican rice. Now I’m sure you’re thinking the whole point of holiday taco night is to use up holiday leftovers not make new food. Well, my Mexican rice dish uses up leftover broth from cooking that holiday turkey and tomato sauce from making Christmas Eve lasagna (if you’re Italian American).
Even better, you can make this side dish in only 10 minutes by using Minute® Rice!
I’ve made Mexican rice before, but it can take anywhere from 30 to 40 minutes with regular rice. However, after coming up with this dish, I’m going to make sure there’s always a box of Minute® Rice when I make carne asada or fish veracruz. Yes, it was that easy – and that delicious. Ingredients
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1 teaspoon sea salt
- 2 tablespoons finely chopped fresh cilantro
- 1 cup tomato sauce
- 2 cups chicken broth
- 2 cups uncooked Minute® Rice
Directions
In a large saucepan, heat olive oil over medium heat. Add garlic powder, cumin, salt and cilantro. Stir constantly, cook until spices become aromatic – about 1 minute.
Add tomato sauce and broth. Turn up heat to medium high and bring to boil.
Add rice. Bring back to boil. Cover and turn off heat. Let stand 5 minutes or until tomato and chicken broth is absorbed. If the rice seems wet, place back on stove and cook rice over medium heat, stirring constantly.
Cook Time: 10 Minutes
Total Time: 10 Minutes
Servings: Makes 4 cups
