%3C/p%3E%3Cp%3EStracciatella%20of%20Tarragon,%20Semolina%20Flour%20and%20Pecorino%20Cheese%3C/p%3E%3Cp%3EI%20have%20to%20say%20that%20I%20kind%20of%20love%20the%20habit%20of%20coming%20home%20after%20a%20weekend%20trip%20to%20Pennsylvania%20and%20indulging%20in%20a%20soup%20and%20an%20eggy%20dish.%20We%20did%20it%20back%20in%20August%20with%20gazpacho%20and%20our%20ugly-but-delicious%20tortilla,%20and%20after%20Thanksgiving%20we%20toasted%20to%20our%20uneventful%20Amtrak%20ride%20with%20lovely%20stracciatella%20and%20a%20simple%20fritatta.%20As%20we%20worked%20together%20to%20make%20the%20meal,%20both%20Michael%20and%20I%20started%20to%20channel%20Nigella%20Lawson%20a%20bit%20because%20both%20of%20these%20dishes%20seemed%20like%20ones%20you%20might%20see%20on%20one%20of%20her%20many%20BBC%20programs:%20fast,%20loaded%20with%20vegetables%20but%20all%20with%20a%20heavy%20does%20of%20indulgence.%20There%20may%20have%20been%20some%20bad%20British-accented%20commentary%20going%20on%20as%20we%20cooked,%20but%20I%20won%E2%80%99t%20say%20for%20certain.%20All%20I%20will%20confirm%20is%20that%20dinner%20came%20together%20in%20very%20short%20order%20that%20night%E2%80%93and%20that%E2%80%99s%20something,%20I%20think,%20we%20could%20all%20use%20in%20this%20otherwise%20hectic%20time%20of%20year.%3C/p%3E%3Cp%3EFritatta%20of%20Leeks,%20Red%20Peppper%20and%20Pecorino%3C/p%3E%3Cp%3EWhat%E2%80%99s%20great%20about%20the%20fritatta%20for%20dinner%20is%20that%20you%20can%20load%20it%20with%20basically%20whatever%20you%20want%20to,%20so%20it%20can%20make%20clearing%20out%20the%20fridge%20an%20easy%20task%20or%20a%20trip%20to%20the%20grocery%20store%20one%20that%20won%E2%80%99t%20take%20too%20long.While%20it%E2%80%99s%20not%20the%20lightest%20dish%20you%20could%20make%20for%20yourself,%20it%20is%20one%20that%20can%20stand%20on%20its%20own%20as%20a%20one-pot%20meal;%20I%20added%20the%20soup%20because%20I%20had%20been%20dying%20to%20make%20it%20for%20a%20while%20and%20the%20opportunity%20never%20presented%20itself.%20Like%20the%20tortilla%20the%20leftovers%20can%20be%20eaten%20cold%20or%20warmed,%20and%20goes%20particularly%20well%20between%20two%20slices%20of%20toasted%20wheat%20bread.%3C/p%3E%3Cp%3EIn%20other%20words:%20this%20is%20a%20very%20good%20alternative%20when%20the%20prospect%20of%20making%20dinner%20is%20attempting%20to%20stare%20you%20down%20into%20submitting%20to%20calling%20for%20takeaway.%20You%20can%20find%20my%20stracciatella%20recipe%20here,%20while%20Michael%E2%80%99s%20fritatta%20recipe%20can%20be%20found%20below.%3C/p%3E%3Cp%3EMichael%E2%80%99s%20%20Kickass%20Fritatta%3C/p%3E%3Cp%3EHeat%20a%20tbsp%20of%20olive%20oil%20in%20a%20skillet%20on%20medium.%20Turn%20on%20the%20broiler.%20Add%20the%20pancetta%20and%20cook%20on%20medium%20low%20for%208%20minutes%20to%20render%20the%20fat%20out.%20Next,%20add%20the%20leeks,%20increase%20to%20medium%20add%20some%20salt%20and%20cook%20for%20five%20minutes%20until%20soft.%20If%20the%20bottom%20of%20the%20pan%20gets%20brown%20with%20fond,%20add%20some%20water,%20vermouth,%20wine%20or%20stock%20to%20deglaze%20and%20add%20the%20red%20peppers.%20After%20five%20more%20minutes,%20add%20the%20garlic%20and%20mix%20the%20eggs,%202/3%20of%20the%20cheese%20and%20half%20the%20tarragon%20in%20a%20bowl,%20beat%20the%20eggs%20and%20add%20to%20the%20pan.%20Cook%20until%20the%20bottom%20of%20the%20eggs%20set,%20moving%20a%20spatula%20around%20the%20outer%20rim%20of%20the%20pan%20to%20keep%20the%20fritatta%20from%20sticking.%20Once%20set%20on%20the%20bottom%20has%20set,%205%20minutes%20or%20so,%20add%20the%20rest%20of%20the%20cheese%20to%20the%20top%20and%20place%20under%20the%20broiler%20until%20the%20cheese%20browns.%20This%20could%20be%20anywhere%20from%202-5%20minutes.%20Let%20cool%20and%20serve%20with%20the%20remainder%20of%20the%20tarragon.%3C/p%3E){kind=link}
