%3C/p%3E%3Cp%3EBraised%20Lamb%20with%20Tomatoes%20and%20Peppers%20with%20Toasted%20Fideos%3C/p%3E%3Cp%3EI%20saw%20the%20first%20flecks%20of%20snow%20while%20in%20Stamford,%20waiting%20for%20the%206:57%20clutching%20a%20box%20of%20penne%20alla%20puttanesca%20and%20a%20little%20bottle%20of%20Cabernet%20Sauvingnon,%20all%20the%20while%20cold%20and%20thankful%20for%20the%20real%20pashmina%20that%20my%20best%20friend%20had%20gifted%20her%20bridesmaids%20back%20in%20July.%20Though%20winter%20is%20still%20officially%20eight%20days%20away,%20the%20weather%20would%20have%20us%20believe%20that%20it%20is%20here%20now,%20and%20just%20in%20time%20for%20Christmas%20festivities.%20These%20past%20years,%20though,%20haven%E2%80%99t%20felt%20quite%20so%20festive%E2%80%93and%20so%20they%20continue%20to%20be.%20While%20we%E2%80%99re%20OK%20(for%20now,%20at%20least)%20it%20doesn%E2%80%99t%20mean%20that%20we%20can%E2%80%99t%20empathize%20with%20what%20others%20must%20endure,%20what%20we%20endured%20in%20the%20past.%3C/p%3E%3Cp%3ESnow%20usually%20makes%20me%20feel%20elated,%20especially%20when%20I%E2%80%99m%20in%20the%20city:%20%20it%20sparkles%20against%20the%20streetlights%20and%20twists%20about%20in%20the%20artificial%20wind%20tunnels%20that%20skyscrapers%20create.%20Last%20night%20it%20merely%20made%20me%20feel%20cold%20and%20desperate%20for%20a%20taxi.%20Giving%20a%20dollar%20to%20the%20guy%20who%20was%20running%20out%20in%20traffic%20to%20secure%20a%20yellow%20cab%20for%20me%20feel%20almost%20good%20in%20a%20way,%20because%20he%20was%20doing%20something%20absolutely%20crazy%20and%20I%20could%20show%20my%20appreciation%20in%20a%20tangible%20way.%3C/p%3E%3Cp%3EIn%20that%20spirit,%20I%20offer%20this%20rich,%20succulent,%20and%20comforting%20dish:%20tender%20lamb%20chunks%20mixed%20with%20tomatoes%20and%20peppers%20meld%20together%20to%20make%20a%20fantastic%20braise,%20and%20the%20toasted%20noodles%20definitely%20provide%20something%20different%20to%20eat;%20lighter%20than%20pasta%20(if%20you%20ask%20me)%20and%20they%20take%20to%20the%20fideu%C3%A0%20method%20well.%20It%E2%80%99s%20an%20unexpected%20side%20dish%20that%20adds%20depth%20of%20flavor%20to%20an%20already%20comforting%20bowl%20of%20food,%20and%20it%E2%80%99s%20one%20that%20is%20perfect%20for%20an%20unreasonably%20cold%20day.%3C/p%3E%3Cp%3EBraised%20Lamb%20with%20Tomatoes%20and%20Peppers%3C/p%3E%3Cp%3EAdapted%20from%20Spanish%20Country%20Kitchen%3C/p%3E%3Cp%3EServes%202%20with%20generous%20leftovers%3C/p%3E%3Cp%3EIn%20a%20generously-sized%20Dutch/French%20oven,%20heat%20two%20tablespoons%20of%20olive%20oil%20over%20medium%20heat%20and%20add%20the%20onions%20and%20garlic,%20sauteing%20until%20they%20are%20golden%20(or%20until%20about%207%20minutes),%20then%20add%20in%20the%20chile%20and%20mix%20it%20into%20the%20onion-garlic%20mixture.%20After%20a%20minute%20or%20two,%20remove%20the%20vegetables%20and%20wipe%20the%20saute%20pan.%E2%80%99%3C/p%3E%3Cp%3EThe%20rest%20of%20the%20olive%20oil%20will%20then%20go%20into%20the%20pan,%20and%20you%E2%80%99ll%20saute%20those%20morsels%20until%20browned%20and%20then%20add%20in%20the%20onion/garlic/pepper%20mixture,%20then%20the%20roasted%20peppers,%20and%20then%20the%20tomatoes,%20salt%20and%20pepper.%20Bring%20the%20pot%20to%20a%20boil%20and%20then%20reduce%20the%20heat%20to%20a%20simmer%20and%20cook%20for%2030%20minutes%20uncovered%20on%20the%20stove,%20stirring%20from%20time%20to%20time%20to%20make%20sure%20that%20the%20sauce%20isn%E2%80%99t%20sticking%20to%20the%20pan.%3C/p%3E%3Cp%3EThen%20cover%20the%20mess%20and%20cook%20for%20another%2030%20minutes,%20remove%20from%20heat%20and%20let%20rest%20for%20a%20good%20five%20minutes.%20The%20meat%20should%20be%20very%20tender%20at%20this%20point.%20Spoon%20over%20toasted%20fideos%20(below),%20sprinkle%20with%20parsley%20and%20serve.%3C/p%3E%3Cp%3EToasted%20Fideos%3C/p%3E%3Cp%3EServes%202%20with%20generous%20leftovers%3C/p%3E%3Cp%3E3%20cups%20chicken%20broth%3C/p%3E%3Cp%3E2%20generous%20pinches%20of%20safflower%20stamen%20(aka%20%E2%80%9CAmerican%20saffron%E2%80%9D)%3C/p%3E%3Cp%3E3%20tablespoons%20olive%20oil%3C/p%3E%3Cp%3E3/4%20lb%20fine%20egg%20noodles/fideos%3C/p%3E%3Cp%3E2%20large%20garlic%20cloves,%20minced%3C/p%3E%3Cp%3E1-1%201/2%20cups%20water%3C/p%3E%3Cp%3ESea%20salt%3C/p%3E%3Cp%3EIn%20a%20small%20saucepan,%20bring%20three%20cups%20of%20chicken%20broth%20to%20boil,%20reduce%20to%20simmer,%20and%20then%20add%20two%20pinches%20of%20safflower%20stamen%20(it%E2%80%99s%20the%20American%20version%20of%20saffron,%20and%20it%E2%80%99s%20significantly%20cheaper%20than%20saffron.%20Use%20saffron%20if%20it%E2%80%99s%20more%20readily%20available).%20Let%20steep%20for%20at%20least%205%20minutes%20and%20remove%20from%20heat.%3C/p%3E%3Cp%3EIn%20a%20saute%20pan,%20add%20the%20olive%20oil%20and%20heat%20over%20medium-high%20heat.%20When%20shimmering,%20add%20the%20noodles%20and%20toast%20for%20a%20good%20five%20minutes.%20Add%20the%20garlic%20and%20cook%20for%20another%20minute;%20then%20add%20the%20broth%20and%20a%20cup%20of%20water.%20Cover%20the%20pan%20and%20cook%20for%20a%20good%205%20minutes.%20Remove%20the%20cover%20and%20if%20the%20noodles%20seem%20dry,%20add%20the%20reamining%20water.%20Cover%20for%20another%20minute%20or%20so%20if%20necessary,%20then%20remove%20and%20let%20remaining%20liquid%20evaporate.%20Spoon%20into%20bowls%20and%20then%20add%20lamb%20stew%20over%20noodles%20and%20serve%20immediately.%3C/p%3E){kind=link}
