%20to%20be%20able%20to%20say%20that%3C/p%3E%3Cp%3Ethis%20is%20my%20third%20year%20to%20get%20to%20do%2025%20Days%20of%20Christmas%20%E2%80%A6.%20In%20Cookies!%20The%20last%3C/p%3E%3Cp%3Etwo%20years%20I%E2%80%99ve%20baked%20one%20kind%20of%20cookie%20each%20day%20as%20part%20of%20my%2025%20day%3C/p%3E%3Cp%3Ecelebration.%20It%20usually%20gets%20pretty%20hectic%20as%20the%20days%20go%20on%20and%20I%20usually%20get%3C/p%3E%3Cp%3Ea%20little%20behind%20at%20one%20point%20or%20another.%20J%3C/p%3E%3Cp%3EBut%20it%20is%20always%20a%20lot%20of%20fun.%3C/p%3E%3Cp%3EI%20actually%20had%20someone%20ask%20me%20about%20the%20upcoming%20cookie%3C/p%3E%3Cp%3Emadness%20a%20couple%20weeks%20ago%20%E2%80%93%20because%20we%20like%20to%20share%20our%20multitude%20of%20cookies.%3C/p%3E%3Cp%3EJ%20This%20year,%20due%20to%20some%3C/p%3E%3Cp%3Elife%20events%20that%20happened%20at%20the%20beginning%20of%20the%20month,%20I%E2%80%99m%20cutting%20the%20number%3C/p%3E%3Cp%3Eof%20days%20down%20from%2025%20to%2012.%3C/p%3E%3Cp%3ESo%20this%20year%20I%20am%20happy%20to%20present%20the%2012%20Days%20of%20Christmas%3C/p%3E%3Cp%3ECookies!%20To%20kick%20off%20the%20fun,%20I%E2%80%99m%20baking%20a%20classic.%20This%20cookie%20has%20given%20me%20so%3C/p%3E%3Cp%3Emany%20headaches%20over%20the%20years%20that%20I%E2%80%99ve%20always%20fallen%20back%20on%20using%20a%20recipe.%3C/p%3E%3Cp%3EIt%20sounds%20crazy%20but%20I%20have%20never%20been%20able%20to%20come%20up%20with%20my%20own%20recipe%20for%3C/p%3E%3Cp%3Ethis%20cookie.%20Until%20this%20year!%20I%20made%20a%20recipe%20all%20my%20own%20and%20it%20turned%20out%3C/p%3E%3Cp%3Eperfect!%20They%20taste%20so%20delicious%20to%20me,%20that%20it%20rivals%20the%20Pillsbury%3C/p%3E%3Cp%3Erefrigerator-roll-of-dough%20cookies%20that%20I%20made%20the%20other%20day%20(don%E2%80%99t%20judge).%3C/p%3E%3Cp%3EWithout%20further%20ado%E2%80%A6..%3C/p%3E%3Cp%3EMy%20Chocolate%20Chip%20Cookies!%3C/p%3E%3Cp%3EFor%20today%E2%80%99s%20cookie%20adventure%20I%20had%20my%20youngest%20helper%20with%3C/p%3E%3Cp%3Eme.%20J%3C/p%3E%3Cp%3EAfter%20we%20had%20some%20yummy%20homemade%20hot%20chocolate,%20we%20got%20to%20work.%20(The%20recipe%20is%3C/p%3E%3Cp%3Eat%20the%20bottom%20of%20the%20post.)%3C/p%3E%3Cp%3EWe%20started%20by%20whisking%20the%20dry%20ingredients%20together.%20Then%20we%3C/p%3E%3Cp%3Emoved%20over%20to%20the%20mixer%20to%20cream%20the%20butter%20and%20then%20we%20added%20the%20sugars,%20then%3C/p%3E%3Cp%3Ethe%20eggs%20and%20oil.%3C/p%3E%3Cp%3EThen%20it%20was%20time%20to%20add%20the%20flour%20mixture%20into%20the%20butter%3C/p%3E%3Cp%3Emixture.%20I%20think%20this%20was%20my%20favorite%20part%20of%20our%20time%20together.%20Abby%20had%3C/p%3E%3Cp%3Ebrought%20a%20stack%20of%20her%20books%20in%20to%20the%20kitchen%20to%20read%20the%20steps%20to%20me.%20J%20I%20thought%20that%20was%20so%3C/p%3E%3Cp%3Ecute!%20My%20girls%20really%20get%20into%20baking.%20While%20we%20were%20standing%20at%20the%20mixer%3C/p%3E%3Cp%3Eadding%20in%20the%20flour%20mix,%20Abby%20had%20a%20book%20laid%20open%20on%20the%20counter.%20(The%20book%3C/p%3E%3Cp%3Eshe%20had%20out%20was%20%E2%80%9CIf%20I%20Could%20Keep%20You%20Little%E2%80%9D%E2%80%A6.I%20can%E2%80%99t%20get%20through%20reading%20this%3C/p%3E%3Cp%3Ebook%20to%20her%20without%20getting%20choked%20up.)%20She%20started%20out%20reading%20the%20%E2%80%9Csteps%E2%80%9D%20for%3C/p%3E%3Cp%3Ewhat%20we%20needed%20in%20the%20recipe%20and%20the%20steps%20we%20had%20to%20follow.%20Somewhere%20along%3C/p%3E%3Cp%3Ethe%20way,%20the%20pictures%20took%20hold%20of%20her%20attention%20and%20she%20began%20reading%20the%3C/p%3E%3Cp%3Estory%20quietly%20to%20herself.%20J%3C/p%3E%3Cp%3EAbby%E2%80%99s%20chocolate%20radar%20started%20kicking%20in%20and%20she%20closed%20up%3C/p%3E%3Cp%3Eher%20book.%20She%20knew%20it%20was%20getting%20close%20to%20the%20time%20to%20add%20the%20chocolate%20chips.%3C/p%3E%3Cp%3EJ%20So%20we%20added%20the%3C/p%3E%3Cp%3Evanilla%20extract%20and%20then%20took%20the%20bowl%20down%20from%20the%20mixer.%20My%20little%20helper%3C/p%3E%3Cp%3Ecalled%20dibs.%20Haha%3C/p%3E%3Cp%3EThen%20we%20mixed%20in%20the%20chocolate%20chips.%20Abby,%20of%20course,%20had%3C/p%3E%3Cp%3Eto%20%E2%80%9Ctest%E2%80%9D%20some%20of%20the%20chocolate%20chips.%20J%3C/p%3E%3Cp%3EThen%20we%20scooped%20the%20dough%20onto%20the%20cookie%20sheet.%3C/p%3E%3Cp%3EAbby%20thought%20the%20cookie%20scoop%3C/p%3E%3Cp%3Ewas%20the%20neatest%20thing.%20After%20we%20popped%20the%20sheet%20into%20the%20oven,%20Abby%20sat%20on%20the%3C/p%3E%3Cp%3Ecounter%20and%20worked%20on%20figuring%20out%20the%20cookie%20scoop.%3C/p%3E%3Cp%3EFirst%20figuring%20out%20how%20it%20works.Now%20she's%20trying%20to%20scoop%20some%20out%20one-handed.One-handed%20wasn't%20working%20for%20her,%20so%20she%20tried%20using%20two%20hands.%20:)%3C/p%3E%3Cp%3EAfter%2010%20minutes%20of%20waiting,%20the%20cookies%20came%20out!%3C/p%3E%3Cp%3EOnce%20the%20cookies%20came%20out%20and%20cooled%20down%20a%20bit,%20we%20had%20to%3C/p%3E%3Cp%3Edo%20a%20quality%20check.%20I%E2%80%99m%20glad%20to%20say%20they%20passed.%20J%3C/p%3E%3Cp%3ELook%20at%20the%20gooey%20chocolate!%20mmmmmmm%3C/p%3E%3Cp%3ENow%20it's%20time%20for%20the%20recipe!%3C/p%3E%3Cp%3Eset%20aside.%3C/p%3E%3Cp%3EIn%20a%20mixing%3C/p%3E%3Cp%3Ebowl,%20whisk%20together%20the%20flour,%20baking%20soda,%20salt,%20cinnamon%20and%20nutmeg.%20Set%20the%3C/p%3E%3Cp%3Ebowl%20aside.%3C/p%3E%3Cp%3EUsing%20a%20stand%3C/p%3E%3Cp%3Emixer%20fitted%20with%20the%20paddle%20attachment,%20cream%20the%20butter.%20Add%20in%20the%20sugars%3C/p%3E%3Cp%3Eand%20continue%20beating%20on%20a%20slow%20speed.%20As%20the%20sugars%20become%20incorporated%20with%3C/p%3E%3Cp%3Ethe%20butter,%20increase%20speed%20to%20medium%20for%20a%20minute%20or%20two.%20Be%20sure%20to%20scrape%3C/p%3E%3Cp%3Edown%20the%20sides%20of%20the%20bowl%20occasionally.%3C/p%3E%3Cp%3EAdd%20in%20the%20egg%3C/p%3E%3Cp%3Eand%20oil%20and%20continue%20beating%20on%20low.%3C/p%3E%3Cp%3EWith%20the%20mixer%3C/p%3E%3Cp%3Estill%20on%20low,%20slowly%20and%20gradually%20add%20in%20the%20flour%20mixture.%20Scrape%20down%20the%3C/p%3E%3Cp%3Esides%20of%20the%20bowl%20as%20you%20go.%3C/p%3E%3Cp%3EOnce%20all%20of%20the%20flour%20has%20been%20completely%20mixed%3C/p%3E%3Cp%3Ein,%20beat%20in%20the%20vanilla%20extract.%20As%20soon%20as%20the%20vanilla%20has%20been%20fully%3C/p%3E%3Cp%3Eincorporated,%20stop%20mixing.%20You%20don%E2%80%99t%20want%20to%20over-mix%20the%20dough.%3C/p%3E%3Cp%3EStir%20in%20the%3C/p%3E%3Cp%3Echocolate%20chips.%3C/p%3E%3Cp%3ESpoon%20onto%20the%3C/p%3E%3Cp%3Eprepared%20baking%20sheet%20by%20rounded%20tablespoons%20(or%20a%20super%20handy-dandy%20cookie%3C/p%3E%3Cp%3Escooper!%20J%3C/p%3E%3Cp%3EBake%20at%20325%3C/p%3E%3Cp%3Edegrees%20F%20for%2010%20minutes.%20When%20you%20remove%20from%20the%20oven,%20you%20want%20the%20cookies%20to%20look%20like%20pillows%20of%20fluffiness.%20They%20will%20look%20almost%20raw,%20with%20maybe%20a%20touch%20of%20golden%20brown%20color%20around%20the%20edges.%3C/p%3E%3Cp%3ELet%20the%20cookies%20stand%20on%20the%3C/p%3E%3Cp%3Ecookie%20sheet%20for%205%20minutes.%3C/p%3E%3Cp%3EAfter%205%20minutes,%20you%20have%20perfect%20cookies.%3C/p%3E%3Cp%3ETransfer%20to%20the%20cooling%20rack%20to%20finish%20cooling....or%20just%20grab%20a%20glass%20of%20milk.%20:)%3C/p%3E%3Cp%3EEnjoy!%20J%3C/p%3E){kind=link}
