%20that%20I'll%20ever%20do%20one%20the%20'normal'%20way%20again.%3C/p%3E%3Cp%3EI%20used%20my%20mandolin%20to%20cut%20two%20potatoes%20really%20thin...like%20potato%20chip%20thin...then%20you%20line%20a%20greased%20pie%20plate%20with%20them,%20overlapping%20a%20bit,%20and%20bake%20it%20off%20for%2010%20minutes%20in%20a%20375%20degree%20oven.%20Meanwhile,%20I%20carmelized%20some%20onions,%20browned%20some%20mushrooms,%20whisked%20some%20eggs%20(6%20per%20quiche),%20wilted%20some%20spinach,%20and%20cut%20up%20some%20roasted%20red%20peppers.%3C/p%3E%3Cp%3EQuiche%201%20(on%20the%20left)%3C/p%3E%3Cp%3Elayer%20this%20way-%3C/p%3E%3Cp%3Eon%20top%20of%20potatoes%20go%201/2%20the%20onions,%20then%20the%20spinach,%20then%20the%20eggs%20(6,%20whisked%20with%20a%201/2%20cup%20of%20half%20and%20half),%20then%201/2%20cup%20of%20shredded%20sharp%20cheddar%20cheese.%20Into%20the%20oven%20for%20about%2045%20or%20until%20the%20center%20is%20set.%3C/p%3E%3Cp%3EQuiche%202%20(on%20the%20right)%3C/p%3E%3Cp%3Elayer%20this%20way-%3C/p%3E%3Cp%3Eon%20top%20of%20ol%20smokey...%3C/p%3E%3Cp%3Ewait%20no...whew..maybe%20another%20cup%20of%20coffee%20IS%20Needed!%3C/p%3E%3Cp%3Eon%20top%20of%20the%20potatoes%20goes%20the%20other%201/2%20of%20the%20onions,%20the%20cut%20up%20roasted%20reds,%20and%20the%20mushrooms,%20along%20with%20half%20and%20half%20(same%20amount%20as%20before)%20whisk%20in%201/4%20cup%20of%20grated%20parm,%20then%20top%20it%20all%20with%201/2%20cup%20of%20shredded%20mozz.%20Into%20the%20oven%20blardy%20blar%20blar.%3C/p%3E%3Cp%3EOh...the%20side?%20More%20like%20OH!%20The%20side!%3C/p%3E%3Cp%3ERoasted%20Cherry%20Tomatoes%20with%20Edamame%20(might%20just%20be%20my%20new%20favorite%20thing)%3C/p%3E%3Cp%3E2%20pints%20of%20cherry%20tomatoes%20tossed%20with%20a%20little%20bit%20of%20seasoning%20salt%20(from%20Tastefully%20Simple)%20and%20some%20veg%20oil%20and%20put%20on%20a%20foil%20lined%20cookie%20pan%20in%20the%20bottom%20of%20that%20SAME%20oven%20that%20you%20are%20baking%20your%20quiches%20in..multi-tasking%20Baby!%20Let%20those%20go%20for%20about%20an%20hour%20or%20so..they'll%20let%20you%20know%20when%20they%20are%20done%20b/c%20they%20start%20to%20get%20shrively.%20Not%20sure%20if%20that's%20a%20word.%20Anyway....while%20you%20are%20doing%20all%20the%20OTHER%20stuff...you%20might%20as%20well%20steam%20off%20a%20couple%20bags%20of%20edamame%20and%20shell%20them%20out,%20so%20that%20when%20your%20tomatoes%20are%20done%20you%20can%20toss%20it%20all%20together,%20take%20a%20bite,%20then%20let%20your%20eyes%20roll%20back%20in%20your%20head.%3C/p%3E%3Cp%3ETonight..we're%20having%20chili..even%20though%20it's%20gonna%20be%20almost%2070%20today.%20We%20need%20ONE%20more%20chili%20day%20before%20I%20retire%20the%20recipe%20until%20the%20fall!%3C/p%3E){kind=link}
