%20IronCupcake:Earth%20Choclate%20with%20a%20Twist%20-%20Clementine%20Cupcakes%3C/p%3E%3Cp%3EHere%20is%20what%20was%20supposed%20to%20be%20my%20first%20entry%20into%20ICE...%20my%20clementine%20cupcakes.%20But%20when%20I%20tried%20to%20upload%20my%20picture%20to%20Flickr%20I%20encountered%20some%20problems.%20Oh%20well,%20here%20they%20are%20in%20any%20case...%3C/p%3E%3Cp%3EWhen%20this%20month's%20theme,%20chocolate%20with%20a%20twist,%20was%20announced%20I%20was%20immediately%20interested.%20Being%20a%20total%20chocoholic%20I%20love%20pretty%20much%20every%20possible%20combo%20with%20chocolate%20AND%20one%20of%20my%20all-time%20favourite%20treats%20around%20the%20holidays%20are%20those%20Terry's%20Chocolate%20Oranges.%20It%20was%20so%20convenient%20that%20my%20dad%20came%20home%20last%20night%20with%20a%20whole%20crate%20of%20clementines.%20What%20a%20nice%20way%20to%20re-create%20this%20tasty%20sweet%20treat!%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3ESteps%3C/p%3E%3Cp%3E-Preheat%20oven%20to%20350%C2%B0F%20and%20line%207%20muffin%20cups%20with%20paper%20liners.%20(It%20is%20a%20small%20recipe%20because%20my%20family%20isn't%20a%20big%20fan%20of%20cupcakes%20-%20they%20are%20more%20cookie%20people)%3C/p%3E%3Cp%3E-Cream%20sugar%20and%20butter%20together.%3C/p%3E%3Cp%3E-Beat%20eggs%20in%20small%20bowl.%20Add%201/4%20cup%20clementine%20juice%20(need%20about%204-5%20clementines),%20and%20milk.%20Add%20to%20butter%20and%20mix%20with%20hand%20mixer.%3C/p%3E%3Cp%3E-Sift%20together%20dry%20ingredients.%20Fold%20into%20butter%20mixture.%20Use%20mixer%20to%20incorporate%20fully.%3C/p%3E%3Cp%3E-Bake%20for%2018-20%20minutes.%3C/p%3E%3Cp%3E-For%20the%20icing,%20squeeze%20juice%20of%201%20clementine%20into%20a%20bowl.%20Add%201/2%20tsp%20cinnamon.%3C/p%3E%3Cp%3E-Add%20the%20icing%20sugar%20in%201/4%20cup%20additions,%20beating%20after%20each%20addition.%3C/p%3E%3Cp%3E-The%20icing%20will%20be%20a%20bit%20thin,%20but%20no%20too%20thin%20that%20it%20will%20not%20sit%20on%20top%20of%20the%20cupcakes.%3C/p%3E%3Cp%3E-Separate%20last%20clementine%20into%20segments.%3C/p%3E%3Cp%3E-Melt%20chocolate.%3C/p%3E%3Cp%3E-Dip%20segments%20halfway%20into%20melted%20chocolate%20and%20let%20cool%20on%20waxed%20paper.%3C/p%3E%3Cp%3E-Top%20each%20cupcake%20with%20a%20cooled%20segment.%3C/p%3E%3Cp%3EEat%20&%20Enjoy!%3C/p%3E){kind=link}
