Ingredientes

  • 1 c. flour
  • 1/3 c. brown sugar
  • 2 tsp baking pwdr
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1 x egg beaten
  • 3/4 c. lowfat milk 1 c for peanut variation
  • 1 c. 100% Bran
  • 3 Tbsp. oil

Direcciones

  1. Preheat to 400 degrees. Oil 12-15 muffin c.. In bowl, combine flour, sugar baking pwdr, salt and soda. In small bowl, blend together egg, lowfat milk, and oil; stir in Bran. Let stand 5 min. Add in ingredients for desired flavor; mix til well combined. Stir into flour mix just to blend. Don't over mix. Fill muffin c. 2/3 full. Bake 20-25 min. Cold on rack.
  2. For peanut butter muffins: add in 1/3 c peanut butter and 2 Tablespoons honey
  3. For zucchini muffins: add in 1/2 c grated zucchini, 1/3 c minced walnuts, 1/2 tsp cinnamon.
  4. For molasses-cheddar muffins: add in 1/2 c grated cheddar cheese, 2 Tablespoons molasses, and 1/4 tsp ginger.
  5. Makes 15 muffins
