.%20And%20as%20our%20experience%20demonstrated,%20it%20is%20very%20tolerant%20about%20timing.%3C/p%3E%3Cp%3EMake%20sure%20you%20take%20the%20lamb%20out%20of%20the%20fridge%20several%20hours%20beforehand:%20it%20needs%20to%20be%20at%20room%20temperature%20when%20you%20put%20it%20in.%20If%20you%20want%20you%20can%20marinade%20it%20in%20a%20glug%20of%20olive%20oil,%20a%20spoonful%20of%20red%20wine%20vinegar,%20and%20whatever%20herbs%20you%20fancy.%20I%20find%20this%20is%20a%20good%20flavour%20boost%20for%20indifferent%20lamb,%20but%20I%20didn%E2%80%99t%20bother%20this%20time.%20Preheat%20the%20oven%20to%20as%20hot%20as%20it%20will%20go%20(250C%20in%20my%20case)%20and%20place%20a%20shelf%20fairly%20low%20down.%3C/p%3E%3Cp%3EStab%20the%20leg%20all%20over%20with%20a%20small,%20sharp%20knife%20and%20insert%20slivers%20of%20your%20chosen%20flavouring%20into%20the%20slits.%20We%20used%20Jim%E2%80%99s%20suggestion%20of%20slivers%20of%20garlic%20and%20orange%20zest,%20but%20garlic%20and%20lemon%20zest,%20garlic%20and%20rosemary,%20garlic%20and%20thyme,%20or%20garlic%20and%20anchovies%20would%20be%20good%20too%20(you%20can%20see%20a%20garlic%20theme%20emerging%20here%20%E2%80%94%20I%20find%20it%20hard%20to%20imagine%20lamb%20without%20garlic).%20If%20you%E2%80%99ve%20gone%20for%20the%20citrus%20theme,%20cut%20your%20orange%20and%20lemon%20in%20half%20and%20rub%20them%20vigorously%20all%20over%20the%20lamb.%3C/p%3E%3Cp%3ELiberally%20coat%20the%20lamb%20with%20olive%20oil,%20smearing%20it%20on%20with%20your%20hands.%20Sprinkle%20with%20plenty%20of%20salt%20and%20coarsely%20ground%20black%20pepper.%20Place%20on%20a%20roasting%20tray,%20fatty%20side%20up,%20and%20cook%20in%20the%20oven%20for%2020%20minutes.%20Turn%20over%20and%20cook%20for%20another%2010%20minutes.%3C/p%3E%3Cp%3EIn%20the%20meantime%20get%20together%20some%20clean%20towels.%20If%20you%20have%20a%20coolbox,%20this%20is%20an%20excellent%20choice:%20otherwise%20you%E2%80%99ll%20need%20more%20towels%20or%20blankets.%20Put%20a%20folded%20towel%20in%20the%20bottom%20of%20the%20coolbox.%20At%20the%20end%20of%20the%20cooking%20time,%20wrap%20the%20lamb%20and%20its%20tray%20in%20several%20layers%20of%20foil,%20making%20sure%20there%20are%20no%20gaps.%20Put%20it%20in%20the%20coolbox,%20and%20fold%20towels%20over%20the%20top%20to%20enclose%20it%20completely.%20Put%20the%20lid%20on%20and%20go%20away.%20It%20will%20take%20an%20hour%20and%20a%20half%20to%20finish%20cooking,%20and%20will%20be%20perfectly%20pink%20and%20tender%20all%20the%20way%20through.%20Leaving%20it%20longer%20won%E2%80%99t%20do%20any%20harm.%3C/p%3E%3Cp%3EWhen%20it%E2%80%99s%20done%20you%20can%20make%20gravy%20by%20pouring%20off%20the%20accumulated%20juices%20and%20skimming%20off%20the%20fat.%20Reduce%20the%20remaining%20juice%20in%20a%20pan%20with%20some%20red%20wine%20to%20make%20a%20sauce.%20We%20completely%20forgot%20to%20do%20this,%20but%20the%20juices%20made%20a%20very%20fine%20sauce%20for%20the%20leftovers%20later%20in%20the%20week.%3C/p%3E){kind=link}
