%20guests.%20Those%20of%20you%20in%20India%20must%20have%20heard%20of%20chicken%2065,%20but%20I%20bet%20you've%20not%20heard%20of%2050-50%20chicken!%20Well,%20it's%20just%20a%20name%20I%20thought%20up%20for%20this%20pulao%20that%20I%20make%20often,%20from%20the%20Samsung%20Book%20of%20Microwave%20Recipes%20by%20Tarla%20Dalal%20(now,%20those%20of%20you%20in%20the%20know%20will%20know%20that%20Tarla%20Dalal%20writes%20only%20vegetarian%20recipes-so%20don't%20ask%20me%20how%20non-vegetarian%20recipes%20got%20included%20in%20this%20book!!).%3C/p%3E%3Cp%3EThis%20is%20a%20quick%20version%20of%20the%20yakhni%20pulao%20which%20is%20a%20Kashmiri%20delicacy%20belonging%20to%20the%20Awadhi%20royal%20cuisine.%20%22Yakhni%22%20means%20stock.%20So%20common-sensically%20thinking,%20%22yakhni%20pulao%22%20would%20mean%20any%20rice%20dish%20in%20which%20the%20rice%20is%20cooked%20in%20the%20stock%20in%20which%20the%20meat%20was%20cooked....%20And%20why%20do%20I%20call%20this%2050-50%20yakhni%20pulao?%20Because%20half%20of%20the%20cooking%20is%20in%20a%20microwave%20and%20the%20other%20half%20on%20a%20stovetop!%20You%20could%20also%20do%20the%20microwave%20part%20in%20a%20pressure%20cooker%20instead.%20It%20does%20quicken%20up%20the%20cooking%20process%20and%20yet%20does%20not%20compromise%20on%20taste%20in%20anyway.%3C/p%3E%3Cp%3ESo%20here%20goes,%20my%20all-time%20favorite%20chicken%20pulao%20recipe!%3C/p%3E%3Cp%3ETo%20serve%204%3C/p%3E%3Cp%3EFor%20the%20stock%3C/p%3E%3Cp%3E4%20cups%20water%20(if%20taking%202%20cups%20rice.%20Take%20double%20the%20quantity%20of%20water%20for%20the%20rice%20you%20take).%3C/p%3E%3Cp%3E4%20green%20chillies,%20slit%20lengthwise%3C/p%3E%3Cp%3EIn%20a%20large%20microwave-safe%20bowl,%20place%20all%20the%20ingredients%20for%20the%20stock.%3C/p%3E%3Cp%3EPlace%20the%20bowl,%20uncovered,%20in%20the%20microwave%20and%20cook%20on%20high%20power%20for%2015%20minutes.%3C/p%3E%3Cp%3ETake%20out%20of%20the%20oven%20and%20leave%20to%20cool.%3C/p%3E%3Cp%3EWhen%20cool,%20debone%20the%20chicken%20into%20big%20fleshy%20shreds.%20Discard%20the%20bones.%20Save%20the%20stock.%3C/p%3E%3Cp%3EIn%20a%20frying%20pan%20or%20kadai,%20heat%20the%20oil%20and%20fry%20the%20onions%20until%20it%20turns%20pinkish.%3C/p%3E%3Cp%3EAdd%202%20tablespoons%20of%20the%20ginger-garlic%20paste%20and%20fry%20until%20the%20raw%20smell%20vanishes.%3C/p%3E%3Cp%3ENow%20add%20the%20shredded%20chicken%20and%20fry%20till%20it%20gets%20browned%20(do%20this%20on%20high%20heat).%3C/p%3E%3Cp%3ENow%20add%20the%20remaining%201%20tablespoon%20ginger-garlic%20paste%20and%20fry%20again%20till%20the%20raw%20smell%20vanishes%20(again,%20on%20high%20heat).%20Remove%20from%20fire.%3C/p%3E%3Cp%3EInto%20the%20same%20microwave-safe%20bowl,%20mix%20in%20the%20chicken,%20rice,%20chicken%20stock,%20green%20chillies,%20and%20salt%20to%20taste.%3C/p%3E%3Cp%3EPlace%20this%20in%20the%20microwave,%20uncovered,%20on%20high%20power%20for%209%20minutes%20and%20covered%20for%20another%209%20minutes.%3C/p%3E%3Cp%3EWait%20for%205%20minutes%20before%20opening%20the%20lid.%20Be%20warned%20that%20the%20aroma%20that%20first%20escapes%20is%20simply%20mouthwatering%20:-)%3C/p%3E%3Cp%3ETIPS:%3C/p%3E%3Cp%3EFor%20the%20microwave-safe%20bowl,%20always%20choose%20one%20that%20is%20flat-bottomed%20when%20cooking%20rice,%20to%20ensure%20uniform%20cooking.%3C/p%3E%3Cp%3EUsually%20for%20yakhni%20pulaos,%20the%20spices%20are%20tied%20up%20in%20a%20%22potli%22%20or%20%22bouquet%20garni%22-this%20is%20a%20muslin%20cloth%20where%20you%20tie%20up%20all%20the%20spices%20and%20immerse%20into%20the%20water%20in%20which%20the%20meat%20is%20being%20cooked.%20The%20bag%20is%20then%20removed%20at%20the%20end.%20This%20way,%20the%20flavor%20of%20the%20spices%20spread%20into%20the%20stock,%20yet%20you%20don't%20have%20the%20spices%20floating%20around%20in%20the%20water%20and%20consequently%20in%20the%20rice.%20In%20this%2050-50%20recipe,%20if%20you%20don't%20like%20your%20whole%20spices%20in%20the%20rice,%20then%20just%20sieve%20the%20stock%20off%20all%20spices%20once%20you%20take%20out%20the%20chicken%20pieces.%3C/p%3E%3Cp%3EThis%20would%20also%20be%20good%20with%20lamb,%20which%20is%20what%20Kashmiris%20usually%20make%20a%20yakhni%20pulao%20with%20anyway.%20If%20you%20are%20cooking%20lamb%20in%20the%20microwave%20method,%20it%20might%20take%20a%20considerably%20longer%20time.%3C/p%3E){kind=link}
