%3C/p%3E%3Cp%3E1.%20The%20meals%20can%20be%20breakfast,%20lunch,%20dinner%20or%20a%20combo%20of%20all%20three.%3C/p%3E%3Cp%3E2.%20Each%20one%20must%20include%20one%20meat%20protein.%3C/p%3E%3Cp%3EThat's%20it!%20Easy,%20right?%20Well,%20maybe%20not%20so%20much%20for%20some%20of%20you,%20but%20that's%20why%20we%20are%20doing%20this.%20To%20learn,%20to%20share%20and%20to%20make%20our%20hard%20earned%20dollars%20stretch%20farther.%20So,%20without%20further%20adieu,%20let's%20get%20to%20it.%3C/p%3E%3Cp%3EFor%20April,%20my%20meal%20plan%20is%20based%20on%20one%20thing.%20Leftovers.%20More%20specifically,%20Easter%20Leftovers.%20See,%20this%20is%20how%20my%20brain%20works.%20Whenever%20I%20know%20there%20is%20a%20big%20holiday%20coming,%20I%20buy%20too%20much,%20I%20make%20too%20much,%20but%20in%20the%20back%20of%20my%20mind,%20I%20don't%20worry%20about%20it%20because%20I%20know%20one%20way%20or%20the%20other%20it%20will%20all%20get%20used.%20Rather%20I%20simply%20serve%20the%20same%20dishes%20later%20in%20the%20week,%20transform%20them%20into%20something%20new,%20or%20use%20extra%20ingredients%20I%20bought%20to%20make%20new%20things,%20in%20the%20end%20it%20all%20works%20out.%20Plus,%20I%20can%20make%20my%20weekly%20grocery%20budget%20stretch%20if%20I'm%20combining%20the%20holiday%20meal%20with%20my%20weekly%20menu.%3C/p%3E%3Cp%3EHere%20is%20my%20menu,%20and%20my%20thought%20process%20behind%20each%20meal.%3C/p%3E%3Cp%3EMeal%20%231%3C/p%3E%3Cp%3EDouble%20Cheese%20Mac%20n%20Cheese%3C/p%3E%3Cp%3EFresh%20Pineapple%3C/p%3E%3Cp%3E**%20Even%20though%20I%20normally%20make%20the%20sandwiches%20with%20deli%20ham,%20there%20is%20no%20doubt%20they%20would%20taste%20even%20better%20with%20some%20leftover%20Easter%20ham!%20Oh,%20and%20the%20pineapple?%20It%20always%20goes%20on%20sale%20around%20this%20time%20because%20so%20many%20use%20it%20with%20their%20ham,%20so%20it's%20a%20great%20time%20to%20use%20it%20as%20a%20fresh%20side%20too!%3C/p%3E%3Cp%3EMeal%20%232%3C/p%3E%3Cp%3EDinner%20Rolls%3C/p%3E%3Cp%3E**This%20soup%20is%20a%20great%20way%20to%20use%20up%20extra%20produce%20you%20have%20laying%20in%20the%20crisper%20drawer.%20Let's%20face%20it,%20what%20holiday%20is%20complete%20without%20a%20veggie%20tray?%20And%20the%20extras%20can%20easily%20be%20turned%20into%20a%20soup%20the%20next%20day.%20Dinner%20rolls%20are%20always%20something%20we%20have%20leftover%20after%20a%20holiday%20too!%3C/p%3E%3Cp%3EMeal%20%233%3C/p%3E%3Cp%3EBacon%3C/p%3E%3Cp%3E**%20Can't%20figure%20out%20where%20the%20leftovers%20come%20into%20play%20here?%20EGGS!%20I%20always%20buy%20extra%20for%20dying%20and%20then%20making%20deviled%20eggs%20too.%20So%20when%20I%20have%20an%20extra%20dozen...or%20two...laying%20around,%20breakfast%20for%20supper%20is%20always%20on%20the%20menu!%3C/p%3E%3Cp%3EMeal%20%234%3C/p%3E%3Cp%3EHamburgers%3C/p%3E%3Cp%3EEgg%20and%20Olive%20potato%20salad*%3C/p%3E%3Cp%3EBaked%20Beans%3C/p%3E%3Cp%3E**%20This%20a%20great%20time%20to%20explain%20one%20big%20way%20I%20keep%20my%20grocery%20bill%20down.%20We%20have%20freezer%20beef%20on%20hands%20at%20all%20times.%20Sure,%20the%20initial%20cost%20is%20a%20little%20pricey,%20but%20then%20it%20saves%20us%20$$$%20every%20single%20week.%20The%20potato%20salad%20is%20actually%20a%20new%20recipe%20(see%20below)%20and%20just%20like%20the%20soup,%20it's%20based%20on%20those%20extra%20veggies%20I'm%20going%20to%20have%20laying%20around.%20Not%20to%20mention%20the%20extra%20potatoes%20too!%20Oh,%20and%20baked%20beans?%20Those%20will%20simply%20be%20a%20reheated%20leftover%20from%20the%20holiday!%3C/p%3E%3Cp%3ESo%20there%20you%20have%20it.%20My%20first%20$50%20challenge!%20I%20get%20such%20a%20thrill%20when%20I'm%20able%20to%20save%20money;%20and%20when%20I%20can%20feed%20my%20family%20at%20the%20same%20time,%20well%20that's%20just%20icing%20on%20the%20cake!%3C/p%3E%3Cp%3EDon't%20forget%20to%20comment%20with%20how%20YOU%20would%20feed%20your%20family%20for%20$50.%20How%20many%20meals%20can%20you%20make?%20Have%20any%20great%20tips?%20Share%20them,%20please!!!%3C/p%3E%3Cp%3EPlace%20potatoes%20in%20large%20pot%20and%20cover%20with%20cold%20water.%20Add%20some%20salt.%20Bring%20to%20a%20boil%20and%20cook%20until%20just%20fork%20tender,%20about%2010%20minutes.%20Drain%20and%20rinse%20with%20cold%20water.%20Allow%20to%20cool.%20In%20a%20large%20bowl%20combine%20potatoes,%20olives,%20and%20celery.%20Toss%20to%20combine.%20In%20a%20medium%20bowl%20combine%20mayo,%20mustard,%20vinegar,%20onion%20powder,%20salt%20and%20pepper.%20Mix%20well.%20Pour%20over%20potato%20mixture.%20Stir%20to%20combine.%20Chill%20until%20serving.%20Sprinkle%20with%20paprika.%3C/p%3E){kind=link}
