,%20and%20there%20are%20quite%20a%20few%20versions%20out%20there%20(Southern%20Living%20must%20have%20had%20at%20least%205%20over%20the%20years).%20%20Some%20of%20them%20stray%20away%20from%20using%20condensed%20soups,%20and%20some%20of%20them%20have%20several%20layer%20which%20makes%20it%20some%20sort%20of%20tortilla%20lasagna.%20%20I'm%20not%20a%20big%20fan%20of%20the%20layers%20because%20the%20chips%20end%20up%20super%20soggy.%3C/p%3E%3Cp%3ESince%20my%20cooking%20repertoire%20has%20grown,%20I%20honestly%20don't%20think%20that%20I've%20made%20it%20since%20the%2090s,%20but%20I%20was%20thinking%20chicken%20and%20casseroles%20today,%20and%20it%20immediately%20came%20to%20mind.%20%20Something%20about%20the%20cold%20weather%20just%20makes%20me%20long%20for%20a%20nice,%20warm%20casserole%20(and%20a%20trip%20to%20the%20tanning%20bed,%20too!).%3C/p%3E%3Cp%3EWhat's%20not%20to%20like%20in%20King%20Ranch%20Chicken?%20%20You've%20got%20Doritos%20(in%20this%20version%20anyway),%20cheese,%20and%20a%20mixture%20that%20my%20friends%20and%20I%20used%20to%20refer%20to%20as%20%22barf%22%20since%20it%20really%20does%20look%20like%20it,%20and%20not%20to%20mention%20how%20incredibly%20easy%20it%20is%20to%20make%20this%20dish%20that%20will%20feed%20you%20forever%20when%20you%20are%20a%20poor%20college%20student.%20%20And%20well,%20even%20though%20I'm%20in%20my%2030s%20now,%20I%20am%20a%20college%20student%20at%20least%20for%20a%20little%20while%20longer!%3C/p%3E%3Cp%3ETonight,%20it's%20just%20me%20and%20the%20Tar%20Heels%20on%20TV%20night%20since%20Rick%20won't%20be%20coming%20over.%20%20I%20don't%20blame%20him,%20though.%20%20I've%20got%20to%20get%20up%20very%20early%20in%20the%20morning%20for%20my%20last%20clinical!%20%20I'm%20going%20to%20miss%20my%20preceptor,%20Susan,%20and%20all%20of%20the%20wonderful%20nurses%20at%20Roper%20St.%20Francis%20labor%20and%20delivery!%3C/p%3E%3Cp%3E%22The%20barf%22%3C/p%3E%3Cp%3EMy%20version%20of%20King%20Ranch%20Chicken%20evolved%20over%20the%20years%20as%20my%20cooking%20knowledge%20has.%20It's%20not%20the%20healthiest%20thing%20in%20the%20world,%20but%20it's%20still%20a%20simple,%20super%20comfort%20food.%20I've%20attempted%20to%20make%20it%20not-so-bad-for-you%20by%20using%20reduced%20fat%20cheddar%20cheese%20and%20soups.%3C/p%3E%3Cp%3EKing%20Ranch%20Chicken%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350F.%3C/p%3E%3Cp%3ESeason%20chicken%20with%20salt%20and%20pepper.%20%20In%20a%20large%20skillet%20or%20heavy%20pan,%20heat%20olive%20oil%20and%20add%20chicken.%20%20Saute%20until%20it%20is%20cooked%20and%20no%20longer%20pink%20in%20the%20middle.%20%20Remove%20from%20the%20pan%20and%20place%20on%20a%20towel-covered%20plate%20to%20drain.%20%20Add%20green%20pepper,%20onion,%20and%20garlic%20to%20the%20pan%20and%20saute%20until%20soften.%3C/p%3E%3Cp%3EWhile%20the%20chicken%20is%20cooking,%20combine%20the%20soups,%20Rotel%20tomatoes,%20and%20cilantro%20to%20a%20pot%20and%20heat%20over%20medium-low%20heat.%20%20When%20the%20green%20pepper,%20onions,%20and%20garlic%20have%20finished%20cooking,%20mix%20with%20the%20soup.%3C/p%3E%3Cp%3EIn%20a%2013%20x%209%20inch%20baking%20dish,%20add%20chicken%20and%20then%20cover%20with%20the%20soup%20mixture.%20%20Add%20a%20layer%20of%20Doritos%20and%20then%20top%20with%20cheese.%20%20Bake%20for%2030%20minutes%20uncovered%20or%20until%20the%20mixture%20is%20bubbling.%3C/p%3E%3Cp%3EEnjoy!!!%3C/p%3E){kind=link}
