%20and%20with%20photography%20by%20Matt%20Armendariz%20(the%20Biter,%20as%20in%20Matt%20Bites)(Philadelphia:%20Quirk%20Books,%202011).%3C/p%3E%3Cp%3EI%20received%20a%20review%20copy%20of%20this%20delightful,%20sandwich-shaped%20(crusts%20trimmed)%20book%20from%20the%20publisher%20and%20it%20has%20been%20road%20tested%20a%20few%20times%20in%20the%20last%20month.%20First,%20I%20had%20a%20most%20enjoyable%20time%20reading%20through%20the%20alphabetized%20descriptions%20of%20sandwiches.%20Russo%20writes%20with%20such%20verve%20and%20introduces%20the%20reader%20to%20so%20many%20obscure%20and%20regional%20varieties%20of%20sandwiches,%20that%20it%20is%20a%20pleasure%20to%20pore%20over.%20Whether%20you%20savor%20a%20Southern%20Fried%20Green%20Tomato%20BLT;%20a%20Walleye%20Sandwich%20from%20Minnesota;%20Buffalo,%20New%20York's%20Beef%20on%20Weck,%20or%20Kentucky's%20Hot%20Brown%20Sandwich%20(an%20open-faced%20turkey-bacon%20melt%20with%20Mornay%20cheese),%20there%20are%20plenty%20of%20great%20sandwich%20ideas%20in%20these%20pages.%3C/p%3E%3Cp%3ENow,%20we've%20tried%20a%20few%20of%20these%20tantalizing,%20bready%20meals%20since%20the%20book%20arrived%20at%20Chez%20Crispy.%20Daughter%20No.%202%20immediately%20requested%20a%20Croque%20Monsieur%20and%20I%20made%20some%20Falafel%20Pitas,%20but%20the%20big%20hit%20was%20making%20up%20a%20batch%20of%20Rachel%20and%20Reuben%20Sandwiches.%20How%20could%20I%20not%20try%20my%20name%20in%20a%20sandwich?%3C/p%3E%3Cp%3EThe%20Rachel%20sandwich%20is%20a%20twist%20on%20the%20traditional%20Reuben,%20that%20cardiologist's%20nightmare:%20grilled%20sliced%20corned%20beef%20and%20Swiss%20cheese,%20laced%20with%20sauerkraut%20and%20Russian%20dressing.%20The%20Rachel%20subs%20in%20pastrami%20and%20cole%20slaw,%20but%20is%20no%20less%20awesome.%20Served%20up%20with%20a%20garlicky%20dill%20pickle,%20and%20you're%20talking%20awesome%20eating!%3C/p%3E%3Cp%3ENow,%20for%20a%20wheat-free,%20meat-free%20version%20of%20the%20classic%20Reuben%20for%20my%20gluten-free,%20vegetarian%20husband,%20I%20had%20to%20make%20some%20changes%20to%20Susan's%20traditional%20Reuben%20recipe%20(pp.%20221-222%20of%20the%20book).%3C/p%3E%3Cp%3EObviously,%20corned%20beef%20would%20have%20to%20be%20substituted.%20I%20saw%20a%20great%20recipe%20for%20a%20Tofu%20Reuben%20on%20Vegan%20Dad%20and%20used%20his%20recipe%20(sans%20the%20juniper%20berries,%20which%20I%20just%20don't%20have%20in%20my%20pantry).%20I%20used%20a%20very%20firm,%20almost%20rubbery%20tofu%20purchased%20from%20the%20Asian%20Supermarket%20in%20Albany,%20seen%20below.%20This%20tofu%20is%20ready%20to%20use%20in%20any%20recipe%20and%20it's%20firm%20texture%20allows%20one%20to%20slice%20it%20very%20thinly,%20without%20having%20the%20tofu%20disintegrate%20into%20soft%20pieces.%3C/p%3E%3Cp%3EThe%20spice%20and%20brine%20were%20perfect%20for%20this%20dish%20and%20gave%20the%20tofu%20a%20salty%20and%20complex%20corned%20flavor%20that%20was%20perfect%20for%20the%20sandwich.%20Next%20up%20was%20making%20up%20a%20batch%20of%20braised%20sauerkraut,%20since%20the%20Crispy%20Old%20Man%20likes%20a%20mellower%20kraut%20than%20is%20to%20be%20had%20straight%20out%20of%20the%20can%20or%20jar.%3C/p%3E%3Cp%3EI've%20made%20this%20Braised%20Sauerkraut%20recipe%20many%20times%20before.%20Sometimes%20I%20add%20a%20little%20white%20wine%20or%20beer,%20or%20snipped%20fresh%20herbs%20for%20a%20little%20variation,%20but%20for%20this%20Tofu%20Reuben,%20I%20wanted%20a%20strong%20deli%20flavor,%20so%20I%20went%20heavy%20on%20the%20caraway%20and%20mushrooms:%3C/p%3E%3Cp%3EMelt%20butter%20in%20sauce%20pot.%20Add%20onion,%20carrot%20and%20mushrooms,%20and%20cook%20until%20softened,%20about%2010%20minutes,%20stirring%20occasionally.%20Add%20sauerkraut,%20caraway%20seeds%20and%20vegetable%20broth%20and%20raise%20heat%20to%20high.%20Bring%20to%20a%20boil,%20and%20then%20lower%20heat,%20and%20simmer,%20until%20liquid%20is%20reduced%20by%20half,%20about%2030%20minutes,%20stirring%20occasionally.%3C/p%3E%3Cp%3ETo%20assemble%20your%20Tofu%20Reuben,%20generously%20spread%20some%20Russian%20Dressing%20on%20the%20inside%20of%20your%20bread%20(classic%20rye%20bread%20is%20out%20for%20celiacs,%20so%20we%20used%20one%20of%20Dan's%20chewy%20gluten-free%20rolls),%20top%20with%20a%20mound%20of%20Corned%20Tofu%20slices,%20a%20mound%20of%20braised%20sauerkraut%20and%20a%20couple%20of%20slices%20of%20Swiss%20Cheese.%20You%20can%20then%20grill%20or%20microwave%20up%20your%20Reuben%20to%20ensure%20that%20the%20cheese%20melts,%20and%20then%20hoist%20into%20your%20mouth%20for%20an%20amazing,%20messy%20taste%20treat.%3C/p%3E%3Cp%3EI've%20got%20a%20pile%20more%20sandwiches%20to%20eat%20my%20way%20through%20in%20Russo's%20much%20dog-eared%20book,%20and%20I%20am%20eagerly%20awaiting%20the%20height%20of%20the%20summer%20garden%20season%20so%20as%20to%20consume%20mass%20quantities%20of%20the%20classic%20Tomato%20Sandwich.%20If%20you%20enjoy%20a%20juicy%20food%20history%20book,%20packed%20with%20recipes,%20and%20want%
