Receta A Different Pork Pozole

Base ingredients: hominy, chicken stock, diced green chilies, tomatillos.
Vegetable ingredients and pureed base ingredients in blender.
Strain the base liquid through a fine mesh strainer to remove small tomatillo seeds. Some people have trouble digesting them.
Protein ingredients: Fatty pork loin and good quality chorizo.
I used 2 oz of Mesquite wood for smoking. If you don't have a smoker brown in oil.
Protein going into the smoker.
Mise En Place for vegetables.
Spice components. Epazote is a Mexican herb usually added to legumes. It is said to help with digestion of beans. It grows like a weed so if you can find it for your garden it is very hardy.
Saute vegetables until translucent. Add garlic for 1 minute
Add base liquid and spices to vegetables and simmer covered on low while pork is smoking.
Smoked pork after 1 hour.
Add pork to liquid base and simmered covered on low 1 hour
Add chorizo and potatoes and simmer until potatoes are al dente.
Add hominy and heat through.
Stew is ready for service.
