%20and,%20naturally,%20my%20presents%20had%20a%20culinary%20twist.%20Mark%20never%20disappoints%20when%20it%20comes%20to%20foodie%20gifts%20%E2%80%94%20there%20was%20this%20winner%20a%20couple%20years%20back,%20and%20this%20classic%20the%20Christmas%20before.%20But%20this%20year%E2%80%A6.%7Bwait%20for%20it%7D%E2%80%A6.he%20COOKED%20FOR%20ME!%20And%20not%20just%20any%20old%20meal,%20but%20breakfast,%20the%20one%20time%20of%20day%20I%E2%80%99m%20so%20focused%20on%20getting%20everyone%20else%20ready%20that%20I%20never%20have%20a%20chance%20to%20eat.%20It%20made%20a%20rainy,%20dark%20birthday%20so%20much%20brighter!%3C/p%3E%3Cp%3EOn%20the%20menu:%20a%20Greek%20omelette%20%E2%80%94%20my%20absolute%20favorite%20%E2%80%94%20with%20spinach,%20garlic,%20oregano%20and%20feta%20(!!),%20plus%20an%20English%20muffin,%20a%20(virgin)%20mimosa%20since%20I%20had%20to%20go%20to%20work%20after,%20and%20a%20strawberry%20lemonade%20cupcake%20for%20dessert%20from%20Crumbs%20Bake%20Shop.%3C/p%3E%3Cp%3EGeorgia,%20of%20course,%20contributed%20her%20own%20present,%20including%20a%20good%20night%E2%80%99s%20sleep%20the%20evening%20before.%20(She%20was%20down%20from%208%20pm%20to%207%20am%20with%20no%20%E2%80%98separation%20anxiety%E2%80%99%20symptoms%20whatsoever!%20Last%20night,%20not%20so%20much).%3C/p%3E%3Cp%3EMark%20even%20agreed%20to%20share%20his%20omelette%20recipe,%20which%20came%20from%20The%20Chew.%20This%20is%20a%20guy%20who%20literally%20can%20barely%20cook,%20so%20to%20say%20I%20was%20impressed%20is%20a%20serious%20understatement.%20How%20lucky%20am%20I!%3C/p%3E%3Cp%3EMark%E2%80%99s%20Easy%20Greek%20Omelette%3C/p%3E%3Cp%3Eadapted%20from%20The%20Chew%3C/p%3E%3Cp%3EINGREDIENTS%3C/p%3E%3Cp%3EDIRECTIONS%3C/p%3E%3Cp%3EIn%20a%20medium%20saut%C3%A9%20pan%20over%20medium-high%20heat,%20warm%20the%20olive%20oil.%20Once%20hot,%20add%20the%20spinach%20and%20garlic,%20cooking%20until%20the%20spinach%20has%20wilted%20then%20remove%20to%20a%20strainer%20set%20over%20a%20bowl%20and%20press%20some%20of%20the%20liquid%20out%20with%20the%20back%20of%20a%20spoon.%20Set%20aside.%3C/p%3E%3Cp%3ECrack%20the%20eggs%20into%20a%20bowl%20with%20the%20oregano,%20and%20whisk%20with%20a%20fork.%20Set%20aside.%3C/p%3E%3Cp%3EWarm%20a%20nonstick%20pan%20over%20medium%20heat.%20Add%20the%20butter%20to%20the%20pan,%20and%20once%20it%20foams%20and%20subsides,%20add%20the%20egg%20mixture.%20Move%20the%20outer%20edges%20of%20the%20eggs%20inward%20and%20cook%20until%20just%20set.%20Sprinkle%20the%20feta%20on%20one%20half%20along%20with%20the%20spinach%20mixture%20then%20fold%20the%20eggs%20over%20in%20half.%20Seaon%20with%20salt%20and%20freshly%20ground%20pepper.%20Slide%20the%20omelet%20off%20on%20to%20a%20plate,%20drizzle%20with%20olive%20oil,%20and%20enjoy.%3C/p%3E%3Cp%3EHelpful%20Tips%20from%20The%20Chew%3C/p%3E%3Cp%3E1.%20The%20spinach%20should%20only%20wilt%20a%20little%20bit%20while%20you%E2%80%99re%20saut%C3%A9ing%20it,%20so%20don%E2%80%99t%20over%20do%20it!2.%20Don%E2%80%99t%20salt%20the%20eggs%20before%20putting%20them%20in%20the%20pan.%20Salting%20the%20eggs%20pulls%20moisture%20out%20and%20makes%20them%20rubbery,%20so%20add%20the%20salt%20once%20the%20eggs%20start%20to%20set.3.%20Whisks%20add%20a%20lot%20of%20air%20to%20beaten%20eggs%20and%20make%20the%20final%20product%20too%20fluffy.%20For%20a%20creamier%20omelet,%20use%20a%20fork%20instead%20of%20a%20whisk.4.%20Add%20the%20warm%20spinach%20directly%20on%20top%20of%20the%20feta%20to%20help%20the%20cheese%20melt.5.%20If%20you%E2%80%99re%20having%20difficulty%20sliding%20the%20omelet%20out%20of%20the%20pan,%20try%20sliding%20it%20while%20holding%20the%20pan%20over%20the%20heated%20stove.6.%20Don%E2%80%99t%20be%20afraid%20to%20make%20your%20omelet%20runny%20like%20you%20might%20with%20sunny%20side%20up%20or%20over%20easy%20eggs.%20Your%20omelet%20will%20still%20be%20safe%20to%20eat%20and%20will%20have%20added%20flavor.%3C/p%3E%3Cp%3EWhat%20am%20I%20going%20to%20do%20with%20these%20two??%20What%20a%20pair%20of%20loves.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
