- First Course: Oyster Stew (based on Chef Fusco’s mother’s recipe) served with a Reisling
- Michael Fusco’s Oyster Stew (as best I can remember)
- Yields: 30 servings
- 2 sticks unsalted butter
- 1 stalk celery, finely diced (Do not use the leaves.)
- 1 onion, finely diced (brunoise or tiny cubes)
- 2 qts. fresh oysters with liqueur (Chef used Gulf Oysters.)
- 4 qts. half & half
- 2 dashes of Lea & Perrins Worcestershire sauce
- dash of celery salt

,%20so%20he%20was%20quick%20to%20get%20tickets%20to%20this%20Valentine%E2%80%99s%20Day%20dinner.%3C/p%3E%3Cp%3EIt%20was%20a%20total%20surprise.%20All%20he%20told%20me%20was%20to%20keep%20February%2011%20clear%20on%20the%20calendar.%20Luckily%20there%20were%20no%20ballgames%20or%20other%20school%20events%20that%20needed%20my%20attention.%20He%20is%20such%20a%20trickster%20that%20he%20first%20had%20me%20convinced%20he%20was%20trying%20to%20score%20VIP%20tickets%20for%20a%20dress%20rehearsal%20for%20Cinderella%20that%20Tulsa%20Ballet%20was%20doing%20for%20V-Day.%20Then,%20when%20he%20realized%20that%20I%20already%20had%20tickets%20to%20attend%20that%20weekend%20with%20The%20BFF%20and%20Goddaughter,%20he%20acted%20crushed.%20As%20the%20event%20venue%20was%20near%20a%20local%20comedy%20club,%20he%20let%20me%20believe%20that%20was%20where%20we%20were%20going.%20It%20wasn%E2%80%99t%20until%20we%20were%20actually%20walking%20into%20Kitchen%20Concepts%20that%20I%20realized%20what%20he%20had%20up%20his%20sleeve.%20He%20is%20great!%3C/p%3E%3Cp%3EI%20was%20so%20shocked%20and%20awed%20that%20I%20didn%E2%80%99t%20even%20take%20any%20pictures%20and%20few%20notes,%20but%20luckily%20the%20entire%20event%20was%20posted%20on%20line.%3C/p%3E%3Cp%3EHere%20was%20the%20menu:%3C/p%3E%3Cp%3EOyster%20Stew%20(We%20are%20not%20big%20seafood%20fans,%20but%20this%20was%20outrageously%20delicious.)%3C/p%3E%3Cp%3ESaffron%20Chicken%20(I%20loved%20how%20this%20chicken%20came%20out%E2%80%94crispy%20goodness.)%3C/p%3E%3Cp%3EChocolate%20Dipped%20Strawberries%20(Nothing%20needs%20to%20be%20said%20about%20these%E2%80%94perfect%20Valentine%E2%80%99s%20Day%20dessert.)%3C/p%3E%3Cp%3ECan%20you%20pick%20up%20on%20the%20aphrodisiacal%20theme?%3C/p%3E%3Cp%3EIn%20a%20large%20pot,%20melt%20butter.%20%20%20Add%20celery%20and%20onion%20and%20slowly%20saute%20until%20vegetables%20are%20soft.%3C/p%3E%3Cp%3EWith%20a%20slotted%20spoon,%20drain%20oysters%20reserving%20liqueur%20for%20later.%20%20%20Poach%20oysters%20slowly%20in%20melted%20butter%20and%20veggie%20mixture.%20%20%20%20(Be%20careful%20not%20to%20add%20too%20much%20of%20the%20liqueur%20at%20this%20stage.%20%20Chef%20stated%20that%20there%20is%20enough%20protein%20in%20the%20liqueur%20that%20it%20will%20denature%20and%20be%20sort%20of%20like%20scrambled%20eggs.)%20%20Poach%20%E2%80%9Cwith%20patience%E2%80%9D%20about%2015-20%20minutes.%3C/p%3E%3Cp%3EWhile%20oysters%20are%20poaching,%20slowly%20heat%20half%20&%20half%20in%20another%20pot%20to%20bring%20it%20up%20to%20temperature%20(to%20about%20165%20degrees%20F).%20%20%20Never%20boil%20any%20part%20of%20this%20stew.%20%20%20The%20oysters%20will%20get%20rubbery%20and%20the%20half%20&%20half%20will%20separate.%3C/p%3E%3Cp%3EBefore%20serving,%20add%20liqueur.%20%20Then%20slowly%20ladle%20in%20the%20warmed%20half%20&%20half%20to%20the%20oyster%20stew%20to%20temper%20it.%20Slowly%20stir%20to%20incorporate.%20%20After%20stew%20is%20tempered,%20you%20may%20pour%20in%20the%20rest%20of%20the%20warmed%20half%20&%20half.%3C/p%3E%3Cp%3EIf%20Chef%20had%20found%20O.T.C.%20Crackers,%20he%20would%20have%20served%20them%20up%20but%20they%20were%20not%20to%20be%20had%20in%20Oklahoma.%20%20We%20ate%20this%20with%20a%20few%20saltines.%3C/p%3E%3Cp%3ESecond%20Course:%20Saffron%20Chicken%20with%20an%20un-oaked%20Chardonnay%3C/p%3E%3Cp%3EThird%20Course:%20Chocolate%20Dipped%20Strawberries%20with%20a%20Gruet%20sparkling%20wine%3C/p%3E%3Cp%3EThere%20may%20have%20been%20a%20bit%20of%20a%20learning%20curve%20for%20the%20OK%20Foodie%20staff%20as%20this%20was%20the%20first%20class%20at%20a%20new%20venue%20and%20to%20be%20streamed%20live.%20%20%20All%20in%20all,%20it%20was%20a%20great%20experience%20and%20event.%3C/p%3E%3Cp%3EChef%20Fusco%20is%20currently%20the%20%E2%80%9CDistrict%20Chef%E2%80%9D%20for%20Union%20Public%20Schools%20in%20Tulsa.%20%20%20How%20cool%20is%20that?%20%20%20I%20am%20envious%20and%20jealous%20and%20could%20get%20on%20a%20huge%20soap%20box%20concerning%20child%20nutrition%20programs%20and%20typical%20school%20cafeteria%20food.%20%20%20But,%20I%20will%20leave%20well%20enough%20alone%20and%20will%20refrain.%20I%20hope%20those%20Union%20students%20know%20how%20lucky%20they%20are!%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
