.%3C/p%3E%3Cp%3ESince%20our%20name%20is%20located%20somewhat%20far%20back%20in%20the%20alphabet,%20our%20automated%20phone%20message%20came%20at%204:30%20am.%20Just%20after%20the%20plows%20finished%20their%208th.%20sweep%20of%20our%20street%20-%20which%20they%20began%20at%203:30%20am.%3C/p%3E%3Cp%3EThe%20phone%20is%20on%20my%20side%20of%20the%20bed.%3C/p%3E%3Cp%3E%22Hey%20Mom,%20they%20woke%20me%20up%20too!%22%3C/p%3E%3Cp%3ESince%20I%20was%20up%20I%20thought%20I%20may%20as%20well%20put%20together%20a%20cassoulet.%3C/p%3E%3Cp%3EIf%20you've%20only%20heard%20about,%20but%20never%20eaten,%20cassoulet%20you%20may%20be%20expecting%20everything%20french%20like%20butter%20and%20cream%20and%20wonderful%20herbs%20and%20bread%20and%20cheese%20all%20rolled%20into%20an%20exotic%20fare%20fit%20for%20a%20king.%20In%20reality,%20cassoulet%20is%20a%20french%20country%20dish.%20It%20was%20traditionally%20prepared%20using%20leftover%20meats%20and%20vegetables%20and%20would%20be%20cooked%20over%20the%20course%20of%202%20or%203%20days.%20Cassoulet%20is%20good%20country%20comfort%20food.%3C/p%3E%3Cp%3EThere%20are%20as%20many%20versions%20of%20cassoulet%20as%20there%20are%20frenchmen%20in%20France.%20Here%20is%20my%20humble%20version,%20an%20American%20who%20adores%20french%20food.%3C/p%3E%3Cp%3ELarge%20crock%20pot%20or%20large%20dutch%20oven.%3C/p%3E%3Cp%3EIf%20you%20are%20using%20a%20crock%20pot,%20set%20to%20low.%20If%20you%20are%20using%20a%20dutch%20oven,%20follow%20all%20the%20instructions%20and%20you%20will%20then%20cook%20everything%20on%20a%20very%20low%20flame.%3C/p%3E%3Cp%3ESoak%20the%20beans%20overnight%20OR%20place%20in%20bottom%20of%20heavy%20pan,%20cover%20with%20hot%20water%20and%20boil%20for%202%20minutes.%20Let%20cool%20in%20cooking%20water%20for%201%20hour.%3C/p%3E%3Cp%3ECook%201/2%20the%20bacon%20in%20a%20large%20dutch%20oven.%3C/p%3E%3Cp%3EWhen%20the%20bacon%20is%20crisp%20remove%20with%20a%20slotted%20spoon%20and%20place%20in%20the%20crock%20pot.%20Add%20to%20the%20pot%20with%20the%20bacon%20fat,%20the%20onions,%20carrots%20and%20celery%20(the%20mire-poix)%20and%20cook%20gently%20until%20onions%20and%20celery%20are%20softened.%20Place%20in%20crock%20pot%20with%20the%20bacon.%3C/p%3E%3Cp%3EPour%20the%20beef%20broth%20into%20the%20crock%20pot.%3C/p%3E%3Cp%3EAdd%20the%20tomato%20paste%20and%20stir%20around%20to%20combine.%3C/p%3E%3Cp%3EMake%20an%20herb%20garni%20using%20cheese%20cloth%20and%20the%20thyme,%20rosemary%20and%20bay%20leaves.%20Tie%20and%20add%20to%20the%20crock%20pot.%3C/p%3E%3Cp%3EAdd%20the%20soaked%20beans%20(strain)%20to%20the%20crock%20pot.%3C/p%3E%3Cp%3ESlice%20the%20andouille%20sausage%20and%20add%20to%20crock%20pot.%20This%20is%20what%20your%20cassoulet%20looks%20like%20so%20far:%3C/p%3E%3Cp%3EPlace%20the%20remaining%20bacon%20into%20the%20dutch%20oven%20and%20cook%20until%20crisp.%20Remove%20the%20crisp%20bacon%20with%20a%20slotted%20spoon%20and%20place%20in%20crock%20pot.%3C/p%3E%3Cp%3ESprinkle%20pan%20searing%20(or%20wondra)%20flour%20over%20lamb%20shanks.%20Add%20the%20shanks%20to%20the%20dutch%20oven%20with%20the%20hot%20bacon%20fat%20and%20brown%20all%20over,%20about%2010%20minutes.%3C/p%3E%3Cp%3EAdd%20the%20browned%20lamb%20shanks%20to%20the%20crock%20pot.%3C/p%3E%3Cp%3EDeglaze%20the%20dutch%20oven%20with%20a%20cup%20of%20red%20wine.%3C/p%3E%3Cp%3EScrape%20up%20any%20browned%20bits%20on%20the%20bottom%20of%20the%20pan.%20Add%20to%20the%20crock%20pot.%20Place%20a%20lid%20on%20the%20crock%20pot%20and%20walk%20away.%20Cook%20on%20low%20for%206%20hours.%20You%20can%20do%20all%20this%20the%20night%20before.%20Just%20cook%20it%20the%20next%20day,%20on%20low,%20all%20day%20long.%3C/p%3E%3Cp%3EFinal%20presentation:%3C/p%3E%3Cp%3EOne%20and%20a%20half%20hours%20before%20dinner,%20preheat%20oven%20to%20400%20F.%3C/p%3E%3Cp%3ETaste%20and%20season%20with%20salt%20and%20pepper.%20Spoon%20Cassoulet%20into%20an%20oven%20proof%20casserole,%20arranging%20the%20beans%20and%20vegetables%20on%20the%20bottom.%20Add%20sliced%20duck%20confit*.%20Add%20any%20cooking%20juices%20to%20cover%20the%20beans%20and%20vegetables.%20Top%20with%20lamb%20shanks.%20Sprinkle%20with%202%20cups%20dry%20white%20bread%20crumbs%20mixed%20with%201/2%20cup%20chopped%20parsley.%20Drizzle%20with%20a%20bit%20of%20olive%20oil%20and%20bake,%20uncovered%20for%20one%20hour.%3C/p%3E%3Cp%3EServe%20with%20crusty%20french%20bread%20and%20a%20young%20red%20wine.%20Prepare%20to%20be%20wowed.%3C/p%3E%3Cp%3EA%20Cook's%20Notes:%20*if%20you%20are%20not%20using%20Duck%20Leg%20Confit,%20use%203%20chicken%20thighs.%20Brown%20them%20in%20bacon%20fat%20or%20olive%20oil%20and%20add%20to%20crock%20pot.%20After%205%20hours,%20remove%20chicken%20thighs,%20remove%20skin%20and%20bone%20and%20shred,%20adding%20chicken%20back%20to%20the%20crock%20pot%20with%20beans%20and%20vegetables.%3C/p%3E%3Cp%3EThis%20recipe%20seems%20long%20and%20complicated,%20but%20it%20really%20isn't.%20Just%20follow%20the%20steps,%20adding%20the%20ingredients%20to%20the%20crock%20pot
