- Need:
- 1 1/2 cups dry quinoa
- 3 cups water
- juice of 1 large (and juicy) lemon
- 1/4 cup extra virgin olive oil
- 3 cloves garlic, smashed or diced very fine
- 1/2 teaspoon salt
- 1 teaspoon fresh cracked pepper
- 1 sweet white onion, chopped
- 1 green bell pepper, chopped
- About 1 1/2 cups cherry tomatoes, halved (or quartered if they are big cherry tomatoes)
- About 1/2 cup fresh italian parsley, chopped (about 1/2 bunch)
- About 1/4 cup fresh mint, chopped (1 small package)
- 2 cans chickpeas, drained and rinsed
- 1/2 cup sun dried tomatoes (with a little of the oil.. don't go overboard though)
- 2 cloves garlic, chopped
- About 1/4 cup extra virgin olive oil
