.%20I%20hope%20you%20all%20had%20fantastic%20celebrations%20and%20have%20started%20the%20new%20year%20off%20in%20a%20good%20place,%20filled%20with%20the%20possibilities%20of%20new%20experiences%20and%20new%20beginnings%20and%20all%20that%20jazz.%3C/p%3E%3Cp%3EOur%20New%20Year%E2%80%99s%20celebration%20was%20normal%20in%20that%20it%20was%20filled%20with%20food%20and%20drink%20and%20lots%20of%20cooking,%20but%20slightly%20different%20as%20this%20year%20we%20had%20a%20few%20more%20people%20to%20celebrate%20with%20over%20the%20course%20of%20the%20evening%20between%20our%20out%20of%20town%20guests%20as%20well%20as%20some%20locals.%20It%20all%20went%20really%20well%20and%20we%20had%20a%20lot%20of%20fun,%20and%20I%20think%20the%20spread%20this%20year%20was%20one%20of%20the%20most%20impressive%20yet.%3C/p%3E%3Cp%3EBlinis%20with%20creme%20fraiche%20and%20wild%20salmon%20caviar%3C/p%3E%3Cp%3E(Apologies%20for%20the%20photos%E2%80%93I%20got%20a%20new%20macro%20lens%20for%20Christmas%20which%20is%20awesome,%20but%20I%E2%80%99m%20still%20getting%20used%20to%20it%20so%20some%20of%20these%20shots%20aren%E2%80%99t%20that%20great%20but%20hell,%20I%20wanted%20to%20share%20them%20anyway.)%3C/p%3E%3Cp%3EBecause%20no%20good%20celebratory%20meal%20starts%20without%20some%20meat%20being%20cured%20around%20here,%20we%20ended%20up%20doing%20another%20cured%20beef%20tenderloin%20from%20Hawksmoor%20at%20Home.%20It%E2%80%99s%20funny%E2%80%93I%20had%20all%20of%20these%20thoughts%20of%20making%20this%20over%20the%20summer,%20but%20the%20ingredients%20that%20go%20into%20it%20really%20make%20it%20more%20appropriate%20in%20the%20fall%20and%20wintertime,%20so%20I%E2%80%99m%20going%20to%20try%20to%20have%20it%20again%20at%20least%20once%20before%20it%20gets%20warm%20outside%20again.%20This%20went%20on%20my%20marble%20server%20along%20with%20some%20goat%20cheese%20and%20blackberry%20compote%20and%20some%20salami.%20I%20almost%20forgot%20to%20set%20out%20some%20shards%20of%20Parmigiano-Reggiano,%20Ina-style,%20but%20eventually%20they%20made%20it%20onto%20the%20table%20too.%20Michael%20also%20roasted%20some%20almonds%20with%20soy%20and%20ginger%20and%20so%20we%20had%20a%20nice%20array%20of%20food%20for%20people%20to%20snack%20on%20while%20we%20worked%20on%20the%20other%20dishes.%3C/p%3E%3Cp%3EGoug%C3%A8res,%20the%20second%20time%20around.%3C/p%3E%3Cp%3EThis%20year%20we%20needed%20to%20get%20creative%20about%20making%20food%20ahead%20of%20time%20so%20that%20we%20didn%E2%80%99t%20have%20to%20spend%20all%20of%20our%20Thursday%20in%20the%20kitchen,%20so%20I%20did%20things%20like%20make%20blinis%20one%20night%20and%20infused%20vodka%20two%20ways%20another%20night,%20while%20Michael%20marinated%20chicken%20wings%20and%20got%20the%20beef%20cure%20going.%20Some%20things%20had%20to%20be%20made%20that%20day,%20like%20crisping%20up%20chicken%20skins%20for%20CLT%20salads%20and%20the%20gourgeres%20so%20they%20were%20nice%20and%20fresh%20and%20warm,%20but%20overall%20we%20did%20pretty%20well%20in%20being%20able%20to%20at%20least%20alternate%20who%20was%20in%20the%20kitchen%20and%20who%20was%20in%20the%20living%20room%20entertaining%20our%20guests.%3C/p%3E%3Cp%3EThose%20blinis%20went%20on%20to%20be%20paired%20with%20some%20creme%20fraiche%20and%20salmon%20roe%20caviar,%20which%20was%20good%E2%80%A6but%20it%20wasn%E2%80%99t%20as%20good%20as%20the%20mezcal-cured%20salmon%20that%20I%E2%80%99ve%20come%20to%20really%20love%20and%20I%20think%20next%20time%20I%20would%20try%20to%20make%20that%20instead.%20They%20were%20good,%20don%E2%80%99t%20get%20me%20wrong%E2%80%93I%20just%20prefer%20the%20fluffiness%20of%20the%20savory%20cream%20cheese%20foam.%20(That%20reminds%20me%E2%80%93I%20need%20to%20share%20those%20recipes%20with%20you%20guys!)%3C/p%3E%3Cp%3EThe%20CLTs%20were%20a%20nice,%20light%20addition%20and%20one%20of%20two%20salads%20we%20made,%20with%20the%20other%20being%20my%20old%20standby,%20bresaola-wrapped%20arugula%20salads.%20I%E2%80%99m%20pretty%20sure%20they%E2%80%99ve%20been%20part%20of%20nearly%20ever%20NYE%20celebration%20since%20Polpo%20arrived%20a%20few%20years%20ago,%20and%20they%20never%20seem%20to%20disappoint.%3C/p%3E%3Cp%3EPork%20potstickers!%3C/p%3E%3Cp%3EA%20last-minute%20addition%20to%20the%20menu%20was%20potstickers,%20because%20I%20figured%20we%E2%80%99d%20all%20want%20a%20little%20late-night%20nibble%20to%20get%20us%20through%20to%20midnight,%20and%20that%20ended%20up%20being%20the%20right%20call%20because%20I%20also%20snacked%20on%20some%20the%20next%20day.%20During%20the%20festivities%20I%20also%20made%20goug%C3%A8res,%20and%20while%20I%E2%80%99ll%20get%20to%20this%20in%20greater%20detail%20in%20a%20separate%20post%20that%20I%E2%80%99ve%20been%20struggling%20to%20write,%20all%20I%E2%80%99ll%20say%20is%20that%20it%20took%20two%20tries%20in%20order%20to%20get%20them%20right.%20At%20least%20the%20second%20time%20was%20the%20charm.%3C/p%3E%3Cp%3EEspuma%20de%20crema%20catalana%3C/p%3E%3Cp%3EThe%20main%20reason%20why%20I%20couldn%E2%80%99t%20make%20the%20cream%20cheese%20foam%20was%20because%20I%20had%20something%20else%20taking%20up%20space%20in%20the%20siphon:%20espuma%20de%20crema%20catalana.%20I%20hadn%E2%80%99t%20made%20it%20since%20a%20big%20dinner%20party%20we%20hosted%20in%20July,%20and%20like%20then%20I%20made%20a%20sugar%20sand%20to%20go%20on%20top%20of%20the%20foam%20to%20emulate%20the%20caramelized%20sugar%20on%20a%20regular%20crema%20catalana,%20and%20the%20first%20time%20I%20did%20it%20the%20result%20looked%20awesome;%20to%20be%20honest,%20by%20the%20time%20I%20added%20them%20this%20time%20I%20was%20getting%20tired%20and%20figured%20that%20no%20one%20would%20mind%20a%20few%20little%20bits%20of%20caramelized%20sugar%20here%20and%20there%20since%20I%20wasn%E2%80%99t%20able%20to%20get%20the%20sugar%20pounded%20out%20as%20finely%20as%20I%20would%20have%20liked.%20I%20kept%20the%20portions%20small%E2%80%93a%20sweet%20end%20to%20a%20lovely%20evening%E2%80%93so%20ultimately%20it%20could%20have%20used%20more%20sugar%20sand,%20but%20I%20don%E2%80%99t%20think%20anyone%20complained.%3C/p%3E%3Cp%3EOf%20course,%20we%20had%20lots%20of%20cava%20all%20evening%20but%20perhaps%20one%20of%20my%20favorite%20drinks%20was%20this%20lemongrass%20cocktail%20that%20unfortunately%20I%20didn%E2%80%99t%20get%20a%20good%20picture%20of%E2%80%93but%20before%20you%20despair%20too%20much,%20know%20that%20I%20am%20going%20to%20give%20it%20a%20proper%20post%20of%20its%20own%E2%80%A6eventually.%20It%E2%80%99s%20too%20good%20not%20to%20share,%20and%20what%20made%20it%20awesome%20was%20that%20it%20also%20came%20with%20a%20recipe%20for%20pepper%20bitters%20that%20I%E2%80%99ll%20also%20share%20with%20you%20because%20it%E2%80%99s%20seriously%20the%20one%20flavoring%20agent%20you%20never%20knew%20you%20always%20needed.%3C/p%3E%3Cp%3EWith%20that,%20let%E2%80%99s%20toast%20to%20an%20awesome%202016%20of%20great%20eating%20and%20drinking!%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
