%20So%20what%20if%20it%20is-%20it's%20almost%20our%20anniversary!%3C/p%3E%3Cp%3EMr.%20Wilson%20and%20I%20enjoy%20the%20same%20distinction%20of%20being%20%22only%22%20children.%20Contrary%20to%20popular%20belief%20(of%20the%20sibling%20sort)%20%22only%22%20children%20do%20not%20have%20it%20made.%20While%20yes,%20it's%20true%20that%20we%20don't%20have%20to%20share%20our%20%22stuff%22-%20fill%20in%20age%20appropriate%20noun-%20with%20brothers%20and%20sisters,%20we%20also%20don't%20have%20anyone%20to%20share%20the%20chores%20with.%20And%20that's%20not%20much%20fun.%20Until%20J.C.%20came%20along,%20I%20didn't%20realize%20how%20much%20I%20had%20missed%20out%20on%20by%20not%20having%20someone%20to%20share%20the%20day-to-day%20responsibilities%20with.%3C/p%3E%3Cp%3EI%20felt%20the%20lack%20of%20a%20sibling%20to%20share%20things%20with%20in%20my%20childhood,%20but%20less%20as%20I%20became%20older.%20You%20get%20used%20to%20doing%20things%20alone%20and%20being%20solely%20responsible%20for%20household%20chores.%3C/p%3E%3Cp%3EIn%20the%20past,%20I%20have%20been%20known%20to%20share%20kitchen%20time-%20but%20grudgingly.%20The%20kitchen%20is%20my%20domain.%3C/p%3E%3Cp%3EEnter%20Mr.%20Wilson.%3C/p%3E%3Cp%3EMy%20husband%20is%20so%20much%20fun%20to%20create%20with%20in%20the%20kitchen...and%20we%20usually%20start%20out%20making%20one%20dish%20only%20to%20go%20a%20different%20direction%20as%20the%20mood%20hits%20us...we%20are%20both%20a%20little%20ADD%20together,%20and%20like%20to%20spend%20most%20of%20our%20free%20time%20in%20our%20own%20world...and%20while%20it's%20true%20that%20Mr.%20Wilson%20and%20I%20have%20great%20adventures%20cooking%20together,%20the%20one%20thing%20that%20is%20his%20all%20alone%20is%20his%20ability%20to%20make%20a%20FANTASTIC%20drink.%3C/p%3E%3Cp%3EJ.C.%20is%20just%20GOOD%20with%20this%20kinda%20thing;%20from%20Margaritas%20to%20Mudslides%20to%20Mojitos%20and%20everything%20before%20and%20aft.%20This%20weekend%20we%20actually%20headed%20to%20the%20liquor%20store%20to%20procure%20the%20necessary%20ingredients%20(insert%20crazy%20mad%20scientist%20laugh%20here)%20for%20Strawberry%20Margaritas.%20We%20ended%20up%20making%20Mango%20Margaritas%20together%20and%20a%20Mexican%20casserole%20that%20will%20knock%20your%20socks%20off!%20My%20favorite%20Mexican%20restaurant%20to%20eat%20locally%20is%20Jalapenos,%20or%20I%20should%20say%20%22was%22.%3C/p%3E%3Cp%3EWelcome%20to%20Casa%20Wilson,%20my%20little%20Kitchen%20Witches.%3C/p%3E%3Cp%3EThat's%20right-%20you%20ain't%20ready.%3C/p%3E%3Cp%3EBain%20sult%20as!%20(Enjoy!)%3C/p%3E%3Cp%3EJ.C.%20Wilson's%20Fabulously%20Simple%20but%20Perfect%20%22Last%20Mango%20in%20Pooler%22%20Margarita%3C/p%3E%3Cp%3ELast%20Mango%20complete%20Margarita%20mix%20by%20Margaritaville%3C/p%3E%3Cp%3EGrand%20Marnier%20liqueur;%20some%20of%20each;%20adjust%20to%20your%20own%20taste.%20We%20applied%20both%20liberally.%3C/p%3E%3Cp%3EIce%3C/p%3E%3Cp%3EGrind%20it%20up.%3C/p%3E%3Cp%3ERim%20glass%20with%20sugar%20and%20garnish%20with%20fruit%20of%20your%20choice.%20We%20used%20strawberries%20('cause%20they're%20purty..and%20it's%20what%20we%20had)%20and%20mint%20sprigs%20and%20flowers%20from%20our%20own%20garden.%3C/p%3E%3Cp%3EDrink%20while%20cooking.%20Makes%20everything%20way%20better-er.%3C/p%3E%3Cp%3EIn%20a%202%20quart%20saucepan,%20mix%203/4%20cup%20sugar%20and%20cornstarch.%20Stir%20in%20water%20and%20food%20color.%20Cook%20over%20medium%20high%20heat,%20stirring.%20Bring%20to%20boil%20and%20cook%20for%201%20minute.%20Remove%20from%20heat%20and%20let%20cool%20for%2010%20minutes.%20Add%20to%20fruit%20and%20refrigerate.%3C/p%3E%3Cp%3EHeat%20oven%20to%20450.%20Grease%20bottom%20and%20sides%20of%2013x9%20pan%20lightly%20with%20shortening.%20Mix%20flour,%20sugar,%20baking%20powder,%20and%20salt.%20Cut%20in%20butter-%20use%20a%20pastry%20blender%20or%202%20crisscrossed%20knives-%20until%20mixture%20resembles%20fine%20crumbs.%20Stir%20in%20milk,%20almond%20extract,%20and%20eggs%20until%20just%20blended.%20Spread%20in%20pan.%20Sprinkle%20with%201%20Tablespoon%20sugar%20and%20almonds.%3C/p%3E%3Cp%3EBake%2010-12%20minutes%20light%20golden%20brown.%20Allow%20to%20cool%20completely%20and%20serve%20with%20Triple%20Berry%20Sauce.%3C/p%3E%3Cp%3E(bettycrocker.com)%3C/p%3E%3Cp%3E*NOTE*%20I%20made%20this%20one%20last,%20so%20it%20got%20the%20benefit%20of%202%20margaritas...I%20mixed%20the%20almonds%20right%20into%20the%20batter%20and%20it%20was%20just%20fine.%20Use%20your%20own%20discretion.%20I%20also%20made%20homemade%20whipped%20cream%20for%20topping.%3C/p%3E){kind=link}
