%20corn%20syrup%20and%20a%20bit%20of%20water.%20Then,%20if%20you%20want%20to%20get%20fancy,%20you%20can%20add%20almonds%20and%20chocolate,%20but%20they%20are%20optional.%3C/p%3E%3Cp%3EFirst%20you%20melt%20the%20butter%20in%20a%20heavy%20saucepan,%20then%20add%20the%20sugar,%20water%20and%20corn%20syrup.%20Once%20the%20sugar%20is%20dissolved,%20you%20stop%20stirring%20and%20simply%20watch%20the%20temperature.%20(While%20you're%20waiting,%20grease%20a%20cookie%20sheet%20or%20silicone%20mat%20with%20a%20bit%20of%20butter.)%3C/p%3E%3Cp%3EThe%20syrup%20will%20begin%20to%20darken%20as%20the%20temperature%20rises.%20Time%20to%20pay%20close%20attention!%3C/p%3E%3Cp%3EAt%20290%20degrees,%20add%20slivered%20almonds%20if%20you're%20using%20them.%20We%20did,%20because%20they%20are%20Hubby's%20favorite,%20and%20because%20we%20had%20them%20on%20hand.%3C/p%3E%3Cp%3EOnce%20the%20temperature%20reaches%20300,%20it's%20time%20to%20pour%20the%20toffee%20onto%20your%20buttered%20cookie%20sheet%20or%20silicone%20mat.%20I%20poured%20it%20into%20a%20general%20heart%20shape,%20and%20then%20used%20the%20spatula%20to%20refine%20the%20shape%20while%20the%20candy%20was%20still%20hot%20and%20pliable.%3C/p%3E%3Cp%3EOh,%20yummy.%20And%20easy!%3C/p%3E%3Cp%3ENext,%20to%20really%20gild%20the%20lily,%20we%20sprinkled%20the%20toffee%20with%20milk%20chocolate%20chips.%20Do%20this%20while%20the%20toffee%20is%20still%20warm,%20and%20wait%20just%20a%20moment...the%20heat%20of%20the%20toffee%20melts%20the%20chocolate,%20and%20then%20you%20can%20spread%20it%20with%20a%20spatula.%3C/p%3E%3Cp%3EI%20know%20from%20previous%20experience%20that%20the%20buttery-ness%20of%20the%20toffee%20sometimes%20changes%20the%20look%20of%20the%20chocolate%20after%20it%20cools.%20To%20'fix'%20that,%20we%20just%20sprinkle%20it%20with%20toasted%20almonds%20before%20the%20chocolate%20sets.%3C/p%3E%3Cp%3EVoila!%3C/p%3E%3Cp%3E1.%20Butter%20a%20jelly%20roll%20pan,%20cookie%20sheet%20or%20silicone%20mat%20(on%20a%20metal%20sheet).%20Place%20it%20on%20a%20cooling%20rack%20(to%20get%20it%20up%20off%20the%20countertop)%20and%20set%20aside.%3C/p%3E%3Cp%3E2.%20Melt%20the%20butter%20in%20a%20heavy%20medium%20saucepan%20over%20medium%20heat.%20Do%20not%20allow%20butter%20to%20brown.%20Add%20the%20sugar,%20water%20and%20corn%20syrup%20to%20the%20melted%20butter.%20Stir%20until%20the%20sugar%20is%20completely%20dissolved.%20Bring%20the%20mixture%20to%20a%20boil%20without%20stirring.%3C/p%3E%3Cp%3E3.%20Clip%20a%20candy%20thermometer%20to%20the%20inside%20of%20the%20pan.%20Continue%20to%20cook,%20without%20stirring,%20until%20the%20mixture%20reaches%20300%20degrees%20(hard%20crack).%20If%20you%20are%20adding%20slivered%20almonds,%20add%201/2%20cup%20(untoasted)%20when%20the%20syrup%20reaches%20290%20degrees.%20Continue%20to%20cook,%20stirring%20often,%20until%20it%20reaches%20300%20degrees.%3C/p%3E%3Cp%3E4.%20Remove%20the%20pan%20from%20the%20heat%20and%20immediately%20pour%20the%20hot%20syrup%20into%20the%20prepared%20pan%20or%20onto%20the%20prepared%20silicone%20mat.%20They%20syrup%20will%20spread%20some,%20and%20can%20be%20shaped%20with%20a%20silicone%20spatula%20while%20still%20hot%20and%20pliable.%20It%20is%20too%20hot%20to%20touch%20-%20use%20the%20spatula!%3C/p%3E%3Cp%3E5.%20If%20adding%20chocolate,%20sprinkle%20about%203%20tablespoons%20chocolate%20chips%20on%20top%20of%20the%20candy.%20As%20the%20chips%20melt,%20use%20a%20spatula%20to%20spread%20them%20over%20the%20surface.%20Allow%20the%20candy%20to%20cool%20completely%20in%20the%20pan%20(allow%20chocolate%20to%20harden%20completely%20if%20using).%20Slip%20the%20end%20of%20a%20flexible%20spatula%20under%20the%20edge%20of%20the%20candy%20and%20lift%20the%20candy%20up%20in%20one%20piece.%20To%20eat,%20use%20your%20hands%20to%20break%20it%20into%20bite-sized,%20irregular%20pieces.%20Store%20the%20candy%20in%20an%20airtight%20container%20at%20room%20temperature%20for%20up%20to%20two%20weeks.%3C/p%3E%3Cp%3ELinked%20at%20Sweet%20as%20Sugar%20Cookies%20in%20the%20Sweets%20for%20Saturday.%3C/p%3E){kind=link}
